Iced Tropicana Delight

by Vashte on October 16, 2014

raw- paleo – vegan – wholefood – smoothie- weightloss – fatloss – organic – glutenfree – celiac

www.vashte.com Tropicana Delight

Ohhh I can hear the bongo drums.. hips are starting to wiggle (lol) .. the sun is shining… the water calls.. ah yes, the sweet sound of Summer approaching.

My favourite time of the year is NOW. Spring! Flowers bloom and there is a sense of starting over once again. A general upbeat tempo in the air, no one can put their finger on it but for me, it happens every Sept and Oct. OK mostly – there have  been a couple of off years, but we choose not focus on them. Brilliant months!!

FUN PERSONIFIED!

I’m sharing with you a fabulous smoothie I created the other night. I had a mother of a sweet tooth and for the life of me, I was not leaving the kitchen! How funny.. creating and playing. It gives me a sense of freedom and respite as I trial new ideas in there. Curbs that hankering as I make something delicious from my Wholefoods Kitchen.

My, my..  hasn’t the world changed for me… as I hope it changes for you too. A life remaining the same is rather a dull life and far too ordinary.

When a sweet tooth for me hits, very rarely am I off to buy rubbish from the shops. But it can happen. I prefer..and so does Craig, that I head to the Creative Lounge: My Kitchen and start playing in there!

Healthy Sweet Treats that won’t send your, or my blood sugars into a rage- and far surpass the flavours available from cheap, poisonous ingredients…out there… ewwww

This tasted as good as it looks- I hope you think it looks lush!

Tropical Delight www.vashte.com

A perfect and easy smoothie for any time, any day and is sure to curb that sugar craving.. but you probably don’t get those.. maybe it is just me… lol.

I have balanced the sugars from the fruits with avocado and activated nuts.. which I then stir fried in coconut oil and coconut nectar… you know I bat for most sides when it comes to food- if you are a raw foodist- just don’t cook the nuts- boom. Happy days  :)

Cashews are my nut of choice here- they produce a creamy texture- which is why they are used in so many raw food recipes.

Avocados are used in smoothies 90% of the time in my Wholefood Kitchen as they also create a delicious creamy texture, balance out sugars, and help with fatloss.

Using the nuts and avocado you are sure to enjoy a filling and delicious smoothie- beyond all your wildest dreams! These are the ‘secrets’ behind all those amazing smoothies out there.. now you know.. no excuses at home! Also a great way to sneak Avocado into picky kids foods. – They get a treat they think is icecream- you have a giggle and enjoy the balanced behaviour after one of these as opposed to the anti freeze, refined sugar laden icecream sold for kids….

Enjoy. I am SURE you will as much as we did :)

For a discount on the best coconut nectar available click HERE for the code and HERE for the website. Have a good squizz around. I love their products. You will get 15% off any product using my discount- because we lurve you for hanging out here with me.

Iced Tropicana Delight

www.vashte.com Tropicana Delight

Ingredients

  •  100 ml Almond Mylk- or any non dairy milk you like. Coconut milk is yum. If you want my recipe for nut mylk, click HERE.
  • 1 banana- frozen to create more ice-cream effect- but it can be fresh.
  • ¼ – ½ cup cashews- activated (soak them for a minimum of 30 mins max 6 hours = activated)
  • ¼ to ½ avocado. I usually use ½ – I love them.
  • Organic Vanilla. You decide on how many drops.
  • Coconut Nectar from Purely Natural– oh my Lord I love this stuff.  I added quite a bit this evening- I wanted that sweetness without the guilt.
  • Ice- loads to create your ice-cream thickness

Blend baby blend!!

Pour into a wine glass! That’s what they are good for these days in my house!!

Top with cashews – stir-fried in coconut oil and coconut nectar if you really want to go wild, sweet cacao nibs – again from Purely Natural (this website is very addictive 😉 ), I had some dried blueberries so added those and then…. Drizzled some more coconut nectar.

Hello!!!

Enjoy- please share with anyone who might like this as an alternative to the usual sweet dead food we eat as a human race!! Tag me in on any pictures you take!! @vashte1

Wholefood Workshops

by Vashte on August 31, 2014

wholefood – organic – raw- slowcooked – weightloss – fatloss – paleo – all natural – no gmo

-Wholefood-

Vegan Homemade icecream www.vashte.com

We see fads come in food, and fads go. Be they healthy or not, we are a people searching for the easy way out, and we want it yesterday. But “the time has come the walrus said” …. People are waking up from the slumber that very clever marketers have bathed us in for so many years. No longer can we deny the ever present UN- healthy state too many people find their bodies..and their minds to be in. More and more people are slowly but surely choosing to research, hunt out and learn different strategies to heal themselves– all looking for answers. Answers the pharmaceuticals, manufacturers and agri-business just are not providing. And have never provided… slowly are we realising the pills, potions, quick fixes, shakes and lotions have obviously just not worked… ever.

So where do we go from here?

Welcome to Wholefoods. Or perhaps a better welcome is: welcome BACK to wholefoods. Our grandparents and their parents may have known a thing or too after all…..

What are ‘ wholefoods’? Is this another catch phrase/fad used by the clever marketers? Well yes, in some cases – so buyer beware…always beware!.. Stear clear of food coming in boxes!!!

A wholefood is all about REAL FOOD. It is food that nourishes the body. It is food that nourishes the mind. Do you think the food you eat does not absolutely, directly affect how the mind thinks? hmm think again…. The whole is in the part and the part is in the whole… who can it NOT affect our minds as well as our bodies?

Baked Eggs www.vashte.com

  • A wholefood is food that fills you up-  the body knows when to stop….
  • A wholefood is food that tastes like heaven would!
  • Wholefood is made from natural ingredients with little to no genetic modification from man. Man has NEVER been able to produce a food better than God has. Never.
  • Wholefood is food kept as close to it’s natural state as possible in the cooking process. And when cooked, it is cooked gently to reduce loss of nutrients.
  • Wholefood is food made from ingredients that care for the environment, sustains the beautiful planet we live on and the magnificent animals that have helped to produce it.
  • Wholefood is food that HEALS.
  • Wholefood is simple food using simple ingredients.
  • Wholefood is not lumped into a box- it can be raw, cooked, slowcooked, baked, dehydrated, gluten free, containing gluten, ancient grains, vegan, meat…
  • Healthy food is wholefood. It is not from a box in the middle of the supermarket aisle, nor has it been pulled apart as a singular source with added ‘ nutrients’, artificial sweeteners, additives, fillers, colours…
  • Wholefood can be UGLY to look at.. but the tastes are like little explosions of deliciousness in your mouth!
  • Have you ever wondered how so many people, myself included, can sit down and eat an entire takeaway pizza all to myself..and still feel hungry? I am not a large person- nor am I overweight. But I can do that at the drop of a hat. Easy.

Why?

Here is why I can do that, and likely so can you...: The great majority of ‘ food’  produced by manufacturers and large scale agri-business today is virtually devoid of any nutritional content at all.

What results is that you and I, are able to….. eat and eat and eat. We eat huge amounts of this stuff ‘they’ call food..but we just don’t get full. Not even after one entire family sized pizza. We are still hungry. We are consuming huge amounts of calories ..devoid of any goodness.

We are overfed and undernourished.

Let me repeat that:

We are overfed and UNDER nourished.

Marinate on that a moment. Could it, in fact, be true? Does that seem a fair call? It certainly seems that way to me.

It is little wonder so many of us are painfully overweight, obese and morbidly obese. SO much so that ‘overweight’ is normal today. Why is it so hard to lose that extra 5kgs for those of you out there who exercise and keep relatively healthy? ??? Look at the quality and type of the food we eat… the results are speaking for themselves.

We are all in the same boat. Those who want to lose that 5kgs to those who are morbidly obese. It is time to take back ownership of control- and you CAN do it. One step at a time.

You are not alone.

Take your life back- now!

  • Wouldn’t you like to have the ability of what you put in your mouth?
  • Wouldn’t you like to destroy those ‘cravings’ ?
  • Wouldn’t you like to feel the empowered change of learning some delicious basics?
  • Wouldn’t you like to NOT BE afraid of the kitchen? Im talking to YOU- I know you are reading this.
  • Wouldn’t you like to have some FUN in the kitchen, with no guilt or condemnation attached!
  • Wouldn’t you like to start to experiment with interesting ingredients?
  • Wouldn’t you like to take the control BACK and put it square in your own hands!
  • Wouldn’t you like to never DIET again?

If you answered yes to just one of those questions..

If something triggers an interest in finding out more about wholefoods with me…

If you would like to have a bit of fun (a whole heap of fun) with me in my kitchen, with no judgement..just us sharing ideas….

…then I invite you to my Wholefood Workshops this month.

What is wholefood??

Wholefood-

noun-  British  “ food with little or no refining or processing and containing no artificial additives or preservatives; natural or organic food.”

Wholefood Workshops Gold Coast September 2014 dates!

If you ask me  – ‘Wholefoods’ is a fancy way of describing ingredients that are as natural as we can get them, with  minimal  interference from  mankind. Step AWAY Monsanto.

  • Do you want to learn some simple basics in wholefood cooking so that you can step away from the microwave and eat fresh meals?
  • Do you want to come home to a meal that you prepared before you left for work.. yes in the little time that you have – with it cooking and ready to eat the minute you walk in the door?
  • Do you want to learn the truth about how easy it is to make healthy meals and snacks without spending your life in the kitchen, being a chef or employing one?
  • Do you want to empower your children to learn how to feed themselves when they leave home without relying on fast food? Do you want your children to outlive you- the parents? …..
  • Do you want to reconnect with your family? Meal times and preparing meals can be the best times to do this!
  • Do you want to learn how to make some of the delicious recipes I frequently share on instagram?
  • Think you don’t have time? I can show you that you do!

It is how we survive and thrive. Natural foods create an energetic response in the body AND brain, that no pharmaceutical pill can give you. Precisely the reason why they want you eating that DEAD food!

There is no money in healthy people.

by Vashte on August 17, 2014

wholefoods; glutenfree; celiac; weightloss; fatloss; sugarfree; raw; slowcooked; paleo; workshops; 100% natural; smoothies

Ok my friends. Here it is- the long and the short of it. My last post was in May 2014- it was all about ‘seasons’  in life. I took an unexpected ‘season’ off this site- so I have missed it, and you unless you are connected via instagram or facebook, in which case you will know I have been cooking up a storm!

Sweet Potato Soup www.vashte.com

Me- I have little patience for anything technical. This means the cleverness of blogs (I really don’t understand how this thing works.. ) I just lost my entire blog by pressing the F5 key to reload the page… so at this moment I am slowing my breathing down and focusing on relaxing instead of doing what I instantly wanted to do: throw this thing out the window and communicate telepathically with you all. So you see- we all need a good coach in life – even the coaches themselves!

I’m good in person. So I am going to do more of what I am good at! Being around people!!

Wholefood Workshops with Vashte are coming!  They will be: Hands on, you will get down and dirty in the thick of things, you will create master pieces in moments, have fun and learn loads whilst being in a fun, safe environment and sampling the goodies to take home and/or gobbling them up right then and there! And they will be fun! Did I mention fun?!

Wholefood Workshops with Vashte www.vashte.com

My Wholefood Workshops will show you how easy it is to make nutritious, delicious meals in moments- food that anyone can eat and LOVE be they:  a calorie obsessed teenager; sweet tooth; savoury tooth;  ‘no time to cook’ Mum or Dad, and especially for the fitness fanatic  spending hours in the gym, on the track or bending it like Beckham in the yoga studio. Have you ever wondered why you spend so much time training but cannot seem to lose the weight? The answers will be in my Workshops!!!! Unlocking the secrets to all the questions you have about healthy wholefood!!! Yay!!

Wholefood Workshops with Vashte will not fall into any cooking ‘category’. They revolve around the food I eat to keep me healthy, lean and energetic. They will include:

  • raw food
  • cooked food
  • slow cooked meals
  • vegan food
  • vegetarian
  • carnivore
  • paleo
  • nuts and without nuts.
  • grains but mostly no grains.
  • natural sugars and how to use them. No refined sugar.
  • celiac meals.
  • smoothies- green and others !!

And certainly not limited to those.

Wholefood Workshops with Vashte are designed to get you involved, have fun and meet new like minded people. I want to show you how easy it is to make delicious food from scratch in moments.

Wholefood workshops with Vashte will show you how to save time AND money for meals.

Wholefood Workshops with Vashte will be 100% natural, or course, as this has always been and will always be my mandate.

RAW Dark CHOCOLATE Mousse

by Vashte on March 10, 2014

RAW-Dairyfree-Sugarfree-Wheat and Grainfree- Weightloss- 100% natural- Paleo-Celiac  Smoothies

Dark choc Mousse www.vashte.com

I make a smoothie pretty much every day. If not for myself, then for my fiance. We find that as much as we love food, time does not always allow preparation for a healthy meal, or we are just too pooped after a long day. So a smoothie will suffice as an evening meal- or any meal throughout the day. This one is particularly indulgent and perfect for those days when you are hankering for that little something sweet.

When I chose to eat healthy, that did not mean going without. Quite the opposite in fact. I used to starve myself of so much before I came to an understanding that food is purely a fuel source, and I can eat whatever I want, whenever I want, so long as I balance my days appropriately. Exploring different styles and ways of preparing food has been very much an eye opener, and continues to prove so. Little gems of knowledge picked up at different stages fall into place, and often old beliefs are changed as more and more makes sense, the more I play with my food.

I chose to share this recipe today as I have have two people ask from instagram for the recipe- the second one using the magic word.. so I will now happily provide my recipe.  Old fashioned girl that I am :) I also thought I would share for a friend of mine : Russell – who is rather squeamish at my green concoctions likening them to swamp scum. Fair enough I suppose but those green smoothies are my personal preference. This smoothie is only ever a once in a while for me. Give me green smoothies any day!!!

This is a great chocolate smoothie to be loved by all ages and all palettes :) It could be a great bridge proving to disbelieving friends and family that healthy is not flavourLESS!!! I have a load of raw choc mousse recipes here as well- keep in mind that just because something is ‘raw, all natural, gluten free, etc etc’ doesn’t mean you can go to town on them. Always listen to your body and stop eating when it tells you that you are full. This can be a learning curve for many. But you will get there. When we stop eating with óur eyes’and becoming more aware of what our bodies actually desire; then we are truly on the way to complete wellness.

Have fun in your wellness journey and enjoy this beautiful treat:

What You Need:

  • 100 mls almond mylk. Preferably home made, but it is available from the shops if you are starting out on this new way of eating!
  • 1/4- 1/2 avocado ( makes the smoothie deliciously creamy in texture and stops the release of sugar into the blood stream from being too fast.
  • 1 banana – frozen gives a great texture but fresh is fine too.
  • 1 Tbspn  of good quality cacao. The quality of your cacao powder will directly determine the richness of your mousse. Look for a deep, dark, rich cacao powder.
  • 1 Tbspn cacao nibs.
  • A few cashews.
  • 1-2 dates for extra sweetness
  • a pinch of Himalayan salt
  • 1/2 scoop pea protein, unflavoured. You can use chocolate but MAKE SURE there are NO artificial sweeteners – including 995; sucralose; maltidextrin. I am not a fan of powdered protein. IF I ever use it, it is pea protein only. Ditch the whey isolate and concentrate. Many bodies find it DIFFICULT to absorb, results in inflammation, and can be toxic. Despite all the clever marketing out there. Once we add a powdered protein to a food or have it as a drink- this is no longer considered a ‘whole food’. Man has denatured a natural product- there is nothing natural about powdered protein so lets just get real and honest about that. So just to completely aware of what you are putting into your body and …do your own research!! It pays off in the end, and we can make more educated and wise decisions based on what we ‘know for ourselves’ as opposed to what other people tell us- including me. :)
  • Ice

Blend all in a high powered blender. I use the Vitamix- you can use any blender so long as it is high powered and creates a smooth, creamy texture. This recipe should be thicker consistency, to be eaten with a spoon. Add more mylk if you need it to make it that mousse-like consistency when it is too thick. Always add less to start and add as you go.

I served my mousse with a sprinkle of cacao nibs and bee pollen. I like to mix them into my mouse for a combination of texture when eating a mousse.

Let me know what you think PLEASE!!!!!

RAW Food Class

by Vashte on February 27, 2014

rawfood- alkaline- all natural- weightloss- fatloss- wheatfree- celiac- wholefood- SUGARFREE

With Bryn Morgan and Colin Douglas- the guys behind raw food businesses: RawConnections and Rawthentic Organics.

Raw Food Class www.vashte.com

I love food. I admit it. I am a foodie.

I share my recipes and ideas here on this space, and post my pics via instagram. Food is fun! Food is my friend! I have finally made peace with food and it is no longer war on food or my body because of what I do or what I think!! Ah the sweet sound of …FREEDOM.

On a Saturday morning you will find me mooching swanning around the Burleigh Farmers Markets. Click HERE for details on where they are.

I have my favourite vendors;

  • The apple man with the legitimate free range eggs;
  • The coconut muffin ladies who have recently opened their very own cafe!! Click HERE for their website; located at 1863 Gold Coast Highway- Burleigh Heads. (used the be the Red Frog but now definately improved!)
  • The meditation peps who do the Vietnamese rice wraps although I’m thinking I won’t be able to eat there anymore as I’m just not digesting the rice wrap so well!
  • The kombucha guys and girls and…
  • Last but certainly not least;  Bryn and Colin- the raw foodies with all the goodies from Raw Connections! Click HERE for their website.

My hands-down ultimate favourite is their raw pizza. I just love the base. It is a dehydrated slice made from a load of nuts, seeds and other stuff. Just scrummy! Then they top it with loads of veges and creamy sauces they have made from vegan ingredients. All very clever.

Raw Pizza www.vashte.com

If you are a sugar fan or a self-confessed chocoholic then you will just love their raw chocolate treats, or cheesecakes, or mousses or biscuits..the list goes on. I believe the raw caramel slice is quite famous.  Too sweet for me but not too sweet for most people. I say head down there on a Saturday morning and work through their samples!

Recently Bryn and Colin held a raw food class, so I attended. I am so very glad I did. I have been making treats off the recipes they made on that day ever since and I have been Little Miss Popular as a result! Thanks guys!

Here is a little except from the class via video link. Click HERE.

On the day Bryn made loads of recipes and Colin supervised :) Some of us participated, but I think so many were just in awe of the simplicity of the recipes; that we were busy writing notes and taking photos. I took my big burley 120kg fiancé along too. He was slightly dubious about raw food as a meal- but he left full and satisfied as well! So raw food is not just for those bean poles out there!

We started the afternoon making our own almond mylk. I posted on this recently. Click HERE for that post. I too, had tried making my own almond mylk previously,  but had not bought the nut bag. Big mistake. I just can’t make almond mylk, or any other nut mylk without it. Go get one!

Almond Mylk stages www.vashte.com

Followed closely by Raw Nut Meatballs with Zucchini Noodles tossed in Basil Pesto Dressing. Hello !! Yum. The balls didn’t set as time did not permit Bryn to dehydrate them or set them in the fridge. It mattered not, as the taste was delicious! I have since recreated them and got the balls to set. They went down a treat in my usually ‘’cooked food’’ household!- oh and no meat in this recipe either :)!!

nut balls and pesto zucchini www.vashte.com

Next Bryn made his Raw Fruit and Nut Chocolate: so simple your kids can easily play with this. Let them eat chocolate this way!

And then…his famous Choc Fudge Brownie– oh baby, this is SWEET. Small pieces are all you need over coffee- if you drink coffee but I would choose a green tea to balance out the naughtiness. And yet, the naughty is not THAT naughty… not when you compare the chocolate you would usually be partaking in.

raw Chocolate Fudge Brownie www.vashte.com

More….- he whips up the Raw Cacao Beetroot Cake. BOOM BOOM!

Seriously. If you ever thought raw food was time consuming (as I did) think again. All this food made in the space of two hours- including instruction, answering questions and tasting!!!! On viewing I was sure this cake was not for me as it  looked WAY to sweet for me- but this was the one sweet I could consume all to myself. The topping was the part that threw me, but as the body of the cake was made of beetroot, so there wasn’t that extreme sweetness I associate with raw sweets. Amazing. So amazing I decided to make that cake for my very own birthday party. Belated.

Raw Beetroot Cacao Cheesecake www.vashte.com

Think that is enough? Nooooo-not to be outdone by any other food class.. Bryn continued on and created a new favourite of mine: Raw Rice Free Sushi Rolls with Tamari Dressing. Oh yes! Now we are cooking!! Doup ! Now we are ‘talking’ is better perhaps! No ovens here! Raw Vegan Rice Free Sushi. You have to try it to believe it. And yes, my 120kg burley man LOVES this. I have recreated this dish on a number of occasions! No rice, no meat. All vegan. I bet that confuses some people momentarily….

And finally we finish with a very special dish: Macadamia Crème Cheese on my favourite pizza bases, or cracker bases. THIS crème cheese… Mumma Mia!!! You have GOT to try it at home!!! AMAZ-BALLS!!!

What a day!

What I particularly  liked about this class was the down to earth approach taken by Bryn. He made it all very simple.  A perfect basic class for everyday people to start experimenting with wholefood, left raw.

There are a lot of food police out there, extolling their beliefs on how you ‘must do this, and must do that’; Bryn encouraged everyone there to just give it a go. He wasn’t there trying to ram raw food down my throat threatening that I will  die and go to hell if I don’t switch to raw food NOW. He was very cool in how he just showed us all some great ideas to get us started in playing with our food.

  • And isn’t that what it is all about? Learning to play with food and have fun with it?
  • When we start to have fun, we start to WANT to make the right choices for our bodies and minds. Well I do anyway.
  • When food is not a chore, but a point of interest, then I want to make it tasty and healthy.
  • When I understand how great natural food tastes, looks and makes me feel- then I’m definitely more inclined to choose those options!
  • When I understand how EASY healthy food is..then I’m sold! I love food made easy! Tasty! Fresh!
  • When I learn that food is my friend and not my enemy– that is when the war ends. On food. On my mind. And on my body.

I quite like thinking outside the box and exploring places I haven’t been. It makes it a lot easier when I have good people there to guide me without being so over the top I just can’t relate; and they can’t be bothered. Have you met people like this? The ones who have educated themselves so much that they become so self-righteous and hoity-toity about their wealth of knowledge. Ewww this tires me somewhat. I like kind people with good hearts who are willing to share. Keeping this a reality can allow us to maintain an open enough thought pattern so we CAN change our minds once we learn something new that warrants that change. THAT is wisdom.

I’m truly very stoked, blessed and appreciative for meeting Bryn and Colin at the markets and I thank them so much for this class- and for any more they have in the future. Click HERE to find out about more classes run by the guys. Know that you are in well educated, caring and experienced hands with well over 25 years in the live food world. I am sure Bryn especially is over the moon seeing how very close to mainstream this great way of eating has finally come, and I am sure he has been a very important part of that movement.

How do you meet them face to face? Get down to the Burleigh Farmers Markets and start buying some of their divine wares on a Saturday morning! Start with the raw pizza. Its scrummy! Raw Connections is found int he LOHAS precinct- in the hall with all the organics.

You don’t have to eat ALL raw to enjoy the benefits of raw food. I try to make sure at least 51% or more of my meal is raw to aid with digestion. And I like salads. With no dressing. Easy. Raw Food. Not rocket science :)

Thankyou Bryn and Colin!

Icecream rulz!

by Vashte on February 18, 2014

100% natural, raw, glutenfree, celiac, coconut, refined sugar free, wholefood, icrecream, wheatfree, paleo

icecream by Vashte.com

It’s the middle of February. It’s stinking hot. Who doesn’t feel partial to a little icecream every now and then?! The thing is, the vast majority all that soft, creamy, delightful icecream out there contains ingredients along the lines of antifreeze; is made virtually entirely of refined sugar and all it’s cohorts;  not to mention artificial colours, flavours and dead food sorts rendering this sugar bomb completely toxic to our fabulous human bodies. Sai la vie Golden Gaytime!! Despite how well some people’s tastebuds have been  brain washed- or rather taste washed; I am here to help bridge the gap between what is readily available out there and that crazy, sexy hippie food! Lets have a go with homemade icecream!!!

I like icecream. I’m particularly fond of vanilla- with things in it, like pecans, honeycomb, chocolate, caramel. So I discovered and recreated an idea on how to make my own  icecream with no icecream maker. Just fresh from scratch. No dairy. No refined sugar thankyou very much. And I did!! I think it is delish, healthy and fun and am pleased with my first batch, and will be working on improvements for the next! I have my official taste tester ready to go to critique me fairly but harshly. I can handle it!

I made my Coconut, Almond and AmazonBerry Icecream from wholefoods. Which means, in you and I language,- no packets of anything!! All natural. No refined sugar added. It’s really good :))) The only thing about making homemade icecream without an icecream maker is that it sets really hard. I think an icecream maker stops that. But never the less; it just means you can’t go sneaking a spoonful everytime you are bored and grazing the fridge/freezer (we all do it); so can save you from overindulging. I’m good with that! I have to take this icecream out of the freezer in advance so that it can begin to melt for me to access it. Plan ahead!

Beware when making it up as the mixture before freezing; is just divine. I was not willing to share licking the vitamix bowl with anyone!! LOL

So easy!

What you need:

  • 2 cups raw organic cashews- soaked for 2 hours in filtered water
  • meat from one-two young coconuts
  • water from one young coconut
  • a dash of organic vanilla essence
  • pinch of Himalayan salt
  • 1/4 cup of coconut flower nectar
  • 3 tablespoons of granulated stevia
  • 1/4 cup organic extra virgin coconut oil
  • 1 cup pecans – soaked for two hours in filtered water
  • 1 cup Amazon Berries
  • 1 cup organic almonds. Soaked for 6 hours minimum in filtered water.

How to make it work:

dairy and sugar free icrecream by vashte.com

  • Place all ingredients, aside from some pecans and berries and all almonds, in your blender. You will need a high speed blender, such as a vitamix or similar- there are some great versions for reasonable prices available these days. We need the mixture to be creamy and smooth, no lumps. Blend until the mixture is precisely that- creamy and smooth.
  • Chop almonds, remaining pecans and berries and fold into the smooth, creamy mixture leaving some aside so you can sprinkle on top to make your icecream look even more inviting.
  • chopped soaked nuts www.vashte.com
  • Pour into your chosen container and set in the freezer.

B-U-T-FUL!!!!!

homemade icecream by vashte.com

Remember this will result in a very solid icecream. That is to be expected. Just remove from the freezer before you intend to eat it to allow some defrosting to occur.

This is a basic recipe- add more to it, go wild with the flavours, natural additions and toppings!

Who said natural food was difficult, hard or boring??!!!! YUMMMO!!!!

Please feel free to share and add to this recipe! I am open for ideas and will be making a new batch up very soon!!

How to make Nut Mylk

by Vashte on February 7, 2014

raw- glutenfree- celiac- wholefood- vegan- 100% natural- fatloss

HomeMade Organic Almond Mylk www.vashte.com

I recently went to a fabulous raw food class run by Bryn and Colin from Raw Connections. Easy going, laid back and very informative. I like it. What I especially like is the incredibly balanced approach Bryn has in his class whereby he is not advocated a 100% raw lifestyle expecting your everyday person to suddenly ‘come to the light’ and change to raw food only. His approach appears to be in line with mine– and that is something along the lines of- make it work for you today. Play with your food. Have fun with your food. Explore and experiment to see what your body likes and dislikes as every single human body is made differently. One size does not and never has fit all. (correct me if I am wrong please Bryn if you read this- but that is what I gathered from the class and why I am so happy to promote and advocate your awesome work!!) And try to keep food as real and natural as possible. Work with that :)

In the class we went through a number of great, basic raw food recipes. Bryn made; them we devoured them. Thankyou.

Not new to the health food scene but always open to new ideas to create fresh, live, new foods- that’s me. Why not immerse yourself too in classes, workshops, talks – take away what you can; try new things; invent your own- grow and learn! I firmly believe that the person who calls themselves an expert; a guru; or any other glorifying name.. is obviously not. We constantly learn and grow; grow and learn. We can always take something away from every meeting; experience; conversation- if we are open to it. I took loads from this brilliant class on that Sunday. Thank you.

So I am sharing with you my experience in making almond mylk. Yes; I had tried it before but was missing the essential piece of equipment – which is the nut bag. It would also appear from the comments on my facebook page when I posted my pic- a few of you have had the same dilemma. A dilemma very simple to rectify; so let me assist you here thanks to the gentlemen from Raw Connections. :) I want to add here that people who make nut mylk all the time can be very blasé in the way they describe HOW to make nut mylk. We tend to forget how to explain in simple, clear, concise, baby terms when we become adept on a topic- so let me, as a new nut mylk maker, explain to you; how to make this simple product via a step by step process. To make it easy for you too :)

1. Mega important to get organic nuts. You can make any kind of nut mylk you like, but almond is likely the most common to start with. Once you get a handle on almond mylk, start exploring! Organic is important as you want to reduce the amount of chemicals your body consumes- therefore being kinder to your internal organs- keeps you younger as well. If you can’t get organic try to get spray free.

2. 1 cup of almonds. 3-6  cups of filtered water. Put almonds in a container and cover almonds with the filtered water.  If you want a creamier, thicker mylk soak in 3 cups of water. If you like a thinner mylk use 6 cups of water.

3. Soak. Leave your soaking almonds on your bench- no problem. Soak for 6-8  hours. Most nuts have a shell. For instance, the brown on the outside of the almond is a shell. It protects the actual nut from predators. YOU are a predator :) Soaking plumps the nut up and loosens the shell, therefore releasing the enzymes we need to digest and enjoy all the nutritional benefits of the little nut. That is why we soak them.

4. Drain your nuts in a sieve and wash filtered water over them. This will wash the nuts. Pop your soaked nuts into your blender. A powerful blender is important to help keep the quality of the food in tact. I use a vitamix. But there are plenty of replicas out there at a fraction of the price. They generally don’t last as long. Pour a fresh 3-6 cups of filtered water into the blender over your soaked nuts.

5. Blend. Until the mylk is a creamy, smooth consistency. Approx 1 minute. Here is where you can jazz it up a tad if you like. I don’t. I like my mylk as it is; however, if you are coming straight from bought álternative’ milk to homemade mylk- you may like to bridge the gap in your palette. (or coming from cows milk!) Bought nut milks contain preservatives; sugars; sweeteners,, cheap oils…ra de ra… so simple nuts and water might be too greater jump. Have a taste and make your own decision. If you would like to make a bridge in the transfer- add a natural sweetener to your mylk here. You could add a couple of dates; or natural vanilla essence; or coconut nectar.. just as tad. I think it’s best not to do this, but you have to make your food enjoyable otherwise you just wont make it nor eat it. Right?! If you do add here blend it up to make it all mylk.

blended almond mylk www.vashte.com

6. It’s looking pretty exciting at this point. It looks really creamy and delish. So you get your nut bag. (The one I bought is from Living Synergy. I just stopped on my way home from Bryn’s class at my local health food store and grabbed it.) This one is awesome. I think it’s all in the nut bag as to if your nut mylk works out. Although the blender is pretty important… as are the nuts.. as is your mood 😉 Place your nut bag in a container big enough to hold all the mylk.

Using the nut bag www.vashte.com

7. Pour your creamy mylk into the nut bag then squeeze all the liquid through to the container. ‘Mylking’ the bag! Massage all the mylk out. If you want, you can pop the remains – the almond ‘meal’- back in the blender along with another 3 cups of filtered water and repeat to make your mylk go further and really get all the mylk out of the nuts.

end product nut mylk www.vashte.com

8 Voila !! You now have delicious homemade almond mylk. Use in smoothies; over (grain-free) cereals; in hot drinks; or just drink straight. It will keep for approx 3 days in the fridge. I add cinnamon to mine as I love this hint of flavour, plus its fat-burning quality.

Three nuts that do not require soaking for so long are: macademia, cashews and pinenuts. They can soak for a couple of hours or not at all. When you soak these nuts they become very soft- it is normal. I say this as I thought I had ruined them when I soaked them the first time. I hadn’t.  They are hard to strain through your nut bag- so you don’t have to- they can be used for creamier recipes where the recipe calls for cream, or yoghurt. Sub out the cream and try it with your homemade nut cream! Give it a go! Tell me what you think!

The remainder of the nut left in the bag can be used! Do not through it away! No waste!!! Use it in smoothies; in energy balls; and when my dehydrator arrives… its being used in bases for raw pizza and savoury biscuits.

I met Bryn and Colin as I frequent the Burleigh Farmers Market on Saturday mornings to collect organic or spray free greens and veges; to visit my sister who often holds a naturopathic stall there; and explore local goodies as far as food goes (hello Raw Connections!) Being the lover of fine health filled food that I am; I can spot a fellow well rounded, well balanced kindred spirit when I meet one; especially when they make delicious food lol. Oh and I must also plug my favourite muffin girls -Marie and Maz- try their gluten free coconut muffins. If you can get their recipe I will be your new BFF. Not too sweet; not too savoury. Just right said Little Miss Goldilocks 😉

Head down to the Burleigh Farmers Markets and meet Bryn and Colin. They are in the LOHA’s precinct – inside where all the best foods are – tell them I sent you!! Try their raw pizza. Its my favourite!! Hurry up dehydrator and arrive please!!!

Summer Berry Smoothie

by Vashte on December 6, 2013

Enjoy this berry smoothie in Summer. Packed with goodness, antioxidants, alkalising, raw, delish. Smoothies are mega easy to make, refreshing in the heat of Summer, and filling. The entire family loves them and if you have children- you can pile in goodies without them even knowing it! Smoothies beat a milkshake hands down every time!

www.vashte.com smoothies

My smoothies contain no dairy, no added sugar, no gluten, no artificial sweeteners or ingredients and always safe local ingredients.

It is best to buy from your local farmers markets if you can. There are less chemicals, and you can connect with your local communities supporting smaller companies. Commercial farming practices generally use huge amounts of toxic chemicals and sprays; as well as genetically modified seeds- none of which are good for us. In fact, many people, myself included, believe substances like these are major contributors to terminal illnesses like cancer and autoimmune disorders. Having lived through losing my partner when he was just 38 years old to cancer, I am very aware of the lies being sold and peddled to you and I, the consumers.

We have the buying power to stop this misinformation from being spread- but likely only for a short time as large corporations are working hard to close down individuals from free speech in the health industry. So take action NOW. Your money is what talks to them. If we all choose to buy from local farmers who are organic and/or sprayfree- the price of these items will come down as demand increases. Conversely demand will drop for the toxic foods peddled at supermarkets so the big guys have to get on board with organic, healthful foods. WE control THEM- Through our money. When we choose organic and natural- our immune systems become stronger and we no longer fall ill as easily = So fewer visits to the doctors, less reliance on pharmaceutical drugs (all of which have side effects, suppress the immune system and stress other important internal organs etc etc etc.) = we save money on REACTING to illness by not getting sick!!

Yes, We may spend more money on food but less on doctors, hospitals, drugs, illness. Doesn’t it make more cents to you 😉 to live longer, healthier, carefree lives? Imagine a life without the prediction that 1 in 2 people will develop cancer; where children are expected to outlive their parents; where it is normal for children to be born with or develop ADD, autoimmune disorders, allergies, and terminal illnesses. Doesn’t it make sense to look to our food as a possible remedy to some, if not all, of these present day issues? Please remember food is designed to be the fuel for the body- just like petrol to a car. What happens when you put diesel into a car requiring gas? It malfunctions. Why are our bodies any different? God did not make these bodies with the intention for us to fuel them with processed, frozen, ready-made sugar-laden microwaved meals. If we put dead food in, why are we expecting our bodies to do anything other than …die Faster. Painfully before an acceptable life span of  80 YEARS MINIMUM.

Perhaps we might like to change our perspective. Drop the poverty mentality. The ”lack-of ” mentality. Drop the dependence on pharmaceutical drugs. If we get a head ache- that is usually a sign we are dehydrated as the brain is swelling and pressing against our skull. Simple.  So ask a simple, logical question- have I been drinking water today? What type of food have I eaten? Have I had enough sleep? Is my food living, or is it dead- could it be causing my body to dehydrate as it overworks trying to eliminate the poisonous food I chose to et today? What pharmaceutical drugs am I taking… and just go drink a couple of glasses of filtered water and keep doing that all day, every day.

Food for thought? I hope so.

Anyhoo.. smoothies rock. Especially at this time of the year. I like to jazz them up and throw in as many or as little ingredients as I have in the pantry. There are no rules. Aside from making them taste delish. Smoothies are live foods, usually packed with goodness. And great for when you are running short of time- even better as a desert option when other people choose to stuff their faces with lower class foods. :)

This one is mega simple:

Strawberry Smoothie

– berries are in season- its December- go nuts and enjoy them!

www.vashte.com smoothies

  • 200mls almond milk
  • filtered water
  • ice
  • 1 cup strawberries- any berries you like.
  • 30 gm pea protein ( from vital greens)
  • 1 tablespoon l-glutamine
  • Blend! If you want your smoothie sweeter, try stevia but the more you DONT use a natural sweetener, the faster your palate will adjust and you will enjoy the natural sweetness of organic fruits. Ditch the sugar addiction.
  • xx Vashte xx
