Ohhh I can hear the bongo drums.. hips are starting to wiggle (lol) .. the sun is shining… the water calls.. ah yes, the sweet sound of Summer approaching.

My favourite time of the year is NOW. Spring! Flowers bloom and there is a sense of starting over once again. A general upbeat tempo in the air, no one can put their finger on it but for me, it happens every Sept and Oct. OK mostly – there have  been a couple of off years, but we choose not focus on them. Brilliant months!!

I’m sharing with you a fabulous smoothie I created the other night. I had a mother of a sweet tooth and for the life of me, I was not leaving the kitchen! How funny.. creating and playing. It gives me a sense of freedom and respite as I trial new ideas in there. Curbs that hankering as I make something delicious from my Wholefoods Kitchen.  

My, my..  hasn’t the world changed for me… as I hope it changes for you too. A life remaining the same is rather a dull life and far too ordinary.

When a sweet tooth for me hits, very rarely am I off to buy rubbish from the shops. But it can happen. I prefer..and so does Craig, that I head to the Creative Lounge: My Kitchen and start playing in there!

Healthy Sweet Treats that won’t send your, or my blood sugars into a rage- and far surpass the flavours available from cheap, poisonous ingredients…out there… ewwww

A perfect and easy smoothie for any time, any day and is sure to curb that sugar craving.. but you probably don’t get those.. maybe it is just me… lol.

I have balanced the sugars from the fruits with avocado and activated nuts.. which I then stir fried in coconut oil and coconut nectar… you know I bat for most sides when it comes to food- if you are a raw foodist- just don’t cook the nuts- boom. Happy days  :)

Cashews are my nut of choice here- they produce a creamy texture- which is why they are used in so many raw food recipes.

Avocados are used in smoothies 90% of the time in my Wholefood Kitchen as they also create a delicious creamy texture, balance out sugars, and help with fatloss.

Using the nuts and avocado you are sure to enjoy a filling and delicious smoothie- beyond all your wildest dreams! These are the ‘secrets’ behind all those amazing smoothies out there.. now you know.. no excuses at home! Also a great way to sneak Avocado into picky kids foods. – They get a treat they think is icecream- you have a giggle and enjoy the balanced behaviour after one of these as opposed to the anti freeze, refined sugar laden icecream sold for kids….

Ingredients

  •  100 ml Almond Mylk- or any non dairy milk you like. Coconut milk is yum. If you want my recipe for nut mylk, click HERE.
  • 1 banana- frozen to create more ice-cream effect- but it can be fresh.
  • ¼ – ½ cup cashews- activated (soak them for a minimum of 30 mins max 6 hours = activated)
  • ¼ to ½ avocado. I usually use ½ – I love them.
  • Organic Vanilla. You decide on how many drops.
  • Coconut Nectar from Purely Natural– oh my Lord I love this stuff.  I added quite a bit this evening- I wanted that sweetness without the guilt.
  • Ice- loads to create your ice-cream thickness

Blend baby blend!!

Pour into a wine glass! That’s what they are good for these days in my house!!

Top with cashews – stir-fried in coconut oil and coconut nectar if you really want to go wild, sweet cacao nibs – again from Purely Natural (this website is very addictive 😉 ), I had some dried blueberries so added those and then…. Drizzled some more coconut nectar.

I chose to focus on a couple of topics for these- they are the same workshop each time, so don’t book in for both! Unless you want a double wammy!

Topic: Weightloss and Healthy Snacks.

 

I chose these two topics as I am asked often and constantly about these two topics, and, coming into Summer and  Christmas- these are usually topics high on the priority list of many people:

  1. Because people often forget during Winter -that Summer comes quickly after Winter.. so think they will reduce naughty foods.. ‘ tomorrow’ ….and then it’s ‘ suddenly’   Summer and.. another year spent not swimming…
  2. In a bid to ‘lose weight’ – we become even more preoccupied with the very things we think we can’t have.. so end up often snacking MORE often ..consuming more than we would normally..

I’m a Personal Trainer. I have spent the past 20 years obsessed with food- what works and what absolutely doesn’t. I have a degree that tells you I’m all in the head as well- Psychology. Double major.

Great and powerful combo for attaining true health results, if you ask me.

Here is what I think:

  1. I am sick of the weightloss industry and the lies it spews out.
  2. You can not out-train a poor diet.. even if you are training for an iron man/woman. Note how the iron men and women of today are bigger than they have ever been in history. Now that speaks volumes. (I am not talking about the ones who win- I am talking about your friend down the road who enters, trains, and competes in one).
  3. Wanting to lose weight forces the mind to focus on precisely the things you don’t want to focus on.
  4. We are focused on all the wrong things in life– we trust all the wrong people, we believe the hype of clever marketing, we are forgetting to think for ourselves.
  5. We have taken the fun out of real-food eating and added so much guilt and shame to food- it is a wonder we actually eat at all…however being ‘ naughty’  is now the ‘ in ‘ thing- on the surface (no one explores compounding guilt afterwards when the party is over do they?!)
  6. We are leading into our hottest months, and that means two things: party season and Christmas.. followed closely by January when everyone thinks about dieting again..and then tries it for two weeks in February. Aren’t we sick of Groundhog Day yet? I am.

There is a minimum number and a maximum number for each workshop I run. Neither of which is met yet. I understand that now is a very busy time for people- that’s the way the end of the year rolls for everyone.

My Sept workshops sold out faster than hotcakes to Eskimos! HERE are the testimonies. Pretty cool. I have had a number of people ask for wholefood workshops in the New Year as they are booked solid on every date released by me till Dec!.

I’m just showing you how I maintain a body fat of between 14-16% without dieting, without spending pretty much any time in the gym, without obsessing about what I CANT have to eat. When my eating is off, I can train for hours in the gym, do bikram yoga, run a million miles ..and my body will be bigger than what I want it to be.

When my eating is on- without dieting I am healthy, lean and energetic. My skin is clear. My mind is in that happy place and fat falls off without thinking about it. I spend less time working out, more time sleeping and resting. More time in peace.

Wholefood Workshop With Vashte

On the 13th Sept 2014 – just passed- Living Life OutLoud held our first wholefood workshop– and it was fun! We made everything from snacks to wheatfree pizzas– to tasty treats and delights….

The point of these workshops is to share how I eat with anyone who is interested in learning basic skills, using beautiful organic ingredients where possible, using quality ingredients, and making wholefood easy- suitable to every single person no matter what the budget is, nor time constraints.

I want to share the power in knowing what to eat, when to eat it and how to eat- for a long term, healthy lifestyle– suitable to all dietary choices.

My philosophy in food is pretty simple: Keep it simple; Keep it delicious! If I don’t make delicious food, then I’m not interested. Who wants to eat bland, boring food? Little wonder we reach for the nearest chocolate cake when we are out if food at home is tasteless.

Wholefood ought to be bursting with flavour! Why?! Because wholefood uses whole ingredients. Ingredients that are often organic; or spray free where possible; sourced locally so that means not frozen and available all year round producing a meh flavour. Wholefood is easy. Wholefood will fill you up for longer because it is nutrient dense- not necessary calorie dense. = This is where a lot of our current problem stems from:

Calorie dense DEAD food but is nutrient empty -think anything pre-packaged, ready made, microwavable, fast food.

We need nutrient dense food, with fewer DEAD calories.

Using the processed and refined ingredients so readily available from supermarkets gives us exactly the opposite to what the human body craves.

Refined flour, sugar, fat free… sugar free, synthesised food, anything man has messed with …… very few of these ingredients are actually fit for human consumption. They offer little to zero nutrient benefit to the human body, but still come with empty caloires and then we expect out bodies to digest these chemically laden ‘foods’ – we wonder why there is a continual increase in terminal illness, children being born with terminal illnesses, obesity and a constant existence of illness- always running to the ‘doctor’ for more pharmaceutical drugs- which may ‘bandaid’ the problem presenting… but how many of you actually read those side effects? Which are very real. And very present.

Be honest….

Wholefoods can significantly increase your overall wellnessthe way you think – the words you speak- the energy you have each day – your attitude towards your life and even give you the strength to overcome the issues you face.

Really?  Yes really. These are my very strong beliefs and I am sure any person living a ‘wholefood’ life will testify how changing one thing– can be the instigator to changing so many other areas in life that you may not even consider to be inter-related. …

Wholefoods are simple. Wholefoods are easy. Wholefoods do not subscribe to one way of eating– but a wholefood lifestyle can give you the power to understand how ingredients affect your unique body and mind–  and what works for you. We are all different. When we come to accept that and embrace this fact, we are more able to make empowered decisions relating to how we choose to live our lives. Does that inherently make sense to you?

I am celiac- which means my body does not like gluten nor dairy. In fact the cleaner I get with my eating, then more this becomes very apparent. Some people have a belief system that says “it was easier when you just at anything’ – my question I ask those people who state this is this:

Would you rather have your body and your mind running below par as it exists in a constant state of inflammation from you ‘eating anything ‘ resulting in you getting the cold, the flu, running on empty, low energy, tired, bloated unable to lose those 5 kilos.. or 25 kilos, get grey hair early, dry skin, gas after eating, constipation, diarrhoea, pains in the stomach, headaches…

The list goes on, but this list is a list too many people live with each and every day! And think it is just the way life is for them.

pfff.

It really is not normal. All signs of discomfort are the body trying to communicate with the brain informing us there is something wrong. It is not OK to ‘live’ with these symptoms and pop a pill to dull that warning. NO!! And if that means changing up a few ingredients in your everyday diet is THAT  a big deal? Especially when many if not all these symptoms disappear.. sometimes even  over night… wouldn’t you think that it is worth giving it a try? Wouldn’t it be worth taking out inferior ingredients from your diet? Is it really that hard?

I can go on and on about the benefits of eating well. Eating well does not mean being sucked into fabulous marketing strategies out there every day.

  • Eating well does not mean thinking that shakes will lose the fat, or detox your body and mind.
  • Eating well does not mean dieting, nor does it mean eating 6 meals a day.
  • Eating well does not mean ‘vegan; ‘raw’; ‘paleo’; ‘protein shakes’….or any other label.

Eating well means understanding your own body and working with what you have. That simple.

Noone can tell you how to eat, nor what to eat. We are all different. Theories change constantly. What was ‘right’ last week is ‘wrong’ this week. What was right last year is changed this year. Consider the war between the doctors, the dieticians, the nutritionists, the naturopaths, the raw food community, the paleo community… on and on and on…. bah blah blah….

Why this war? Who instigated this? Who drives it still? Does it really matter if you are willing to examine a few ideas and come to your own conclusion- every person and theory that has been ‘proven’ right – has also been ‘proven wrong’ – it pays to remember this fact.

I am about to release wholefood  workshop  dates for October and November. You are invited to to come hang out in the kitchen with me and play with wholefoods. Spelt Double Choc Chip & Walnut Cookie!!

Who doesn’t love a cookie every now and then? Apparently they are ‘ bad’ for you… well that all depends on the ingredients doesn’t it! My cookies are mouthwateringly delicious – white flour free! White sugar free. Vegan. So enjoy with a lovely cup of green tea ( my preference is Madame Flavour– love her teas). It was a rainy day this cookie day so I had my ugg boots on and a plate of three- all to me. Happy days!

 

These cookies do contain some gluten as spelt has gluten- low gluten- but it’s gluten. As spelt is an ancient grain it is much less refined than regular flour. If you are ‘gluten intolerant’ try spelt – many people can enjoy this ancient grain. If you are a celiac like me – you will need to use a different flour- I give you some options below- and a couple of different photos subbing out the spelt to make them celiac friendly. Wholefood, healthy cooking is really all about understanding ingredients and knowing how to manipulate recipes to suit your digestion and palette. SO have fun with food- like I do!

I am not a ‘baker’  – I predominately make raw treats (without too many nuts and dates..); smoothies; and slow cook or dehydrate. But why put oneself in a box- if I can create these delicious morsels- so can you !!

 

What you need: 

  • 1 cup organic spelt flour
  • 1 teaspoon baking soda
  • 1/2 tsp Himalayan salt
  • 1/4 c almond mylk (homemade if you have time !) HERE is how to make your own mylk. It is easy.
  • 1/4 c melted virgin coconut oil
  • 1/4 c coconut nectar – these are not sweet cookies- if you want them sweeter- you need to add more nectar..but make the recipe first-we eat too much sugar today…..
  • 1 tspn organic vanilla paste – from the supermarket even!! It is heaven :)
  • 200 gm good quality dark chocolate (75% cacao or more!)
  • 1/4 c chopped walnuts

How to Make it Work:

  • Preheat the oven to 150C and line a baking tray with baking paper.
  • Sift spelt, baking soda together in a bowl then add salt.
  • Pour in melted coconut oil, almond mylk, coconut nectar, and vanilla – mix.
  • Add chocolate pieces (keep them chunky!) and walnut pieces leaving a little chocolate and walnut aside to sprinkle on top as decoration.
  • Wet your hands slightly and then roll into balls then place on the baking paper. If you make them big- they result in big cookies. Make them small – they are small cookies!
  • Dip a fork in spelt to lightly cover the prongs and use to flatten the cookie out. Make them quite fat if you like a chunky cookie.
  • Bake for 10-20 minutes. Keep an eye on your cookies as they are easy to burn. They are ready when they are a light brown colour all over- they need to be baked through to the middle. Watch the middle cookies- some ovens cook the cookies on the outskirts faster than the middle ones.
  • When they are done, let them cook for 3 minutes or so, then remove with a spatula to place them on a cooling rack. The longer you leave them on the baking tray- the longer they contunue to bake. They will be quite soft but will harden when they are cool.

Your house should smell amaaaazing! That vanilla is yummmmmy!!! I love my cookies warm- so go ahead – enjoy  one  before they become all boring and cold and…everyone else eats them!!

I pulled mine out a tad too soon so they were a little too moist- I use my dehydrator to finish the job when I do that – they go in for 30mins  or so on 45C – it made them perfect. I slightly over cooked my other version (with no spelt) so was extra wary on these.. !!

Non gluten version:

for celiacs like me!!!

Sub out the spelt for

  • 1 cup of almond meal. Almond meal is simply almonds ground to a flour- I ground mine but left them quite chunky. You do need a fine meal otherwise you end up with quite a wet cookie which is harder to get firm.
  • add 1/4 c coconut flour as well.
  • I took the coconut oil out completely as nuts have their own healthy fats. You don’t need more.

The oven needs to be lower- so set for 130C and bake for longer at the lower heat. This will help ensure you get a crispy cookie without burning the top like I did first time round. Bake for 20 mins keeping a close eye on  them. I popped mine in the dehydrator once they had cooled for 20 mins or so- the dehydrator rocks!  If you don’t have a dehydrator and try this version- pop them in the freezer once they are cooled! Yes really! They end up deliciously crunchy and won’t freeze. Nuts in the freezer are the best place to keep them as they keep their crunchiness there- especially if they have been activated and then dehydrated. (Bonus tip!!)

Next time I make these babies- I will add raisins and take out the walnuts. Keeping the chocolate though thank you very much!

So this is my mixture using my ground almond meal- it can be easier to buy the almond meal if you don’t have the best food processor. See how chunky and nutty it looks? :

We see fads come in food, and fads go. Be they healthy or not, we are a people searching for the easy way out, and we want it yesterday. But “the time has come the walrus said” …. People are waking up from the slumber that very clever marketers have bathed us in for so many years. No longer can we deny the ever present UN- healthy state too many people find their bodies..and their minds to be in. More and more people are slowly but surely choosing to research, hunt out and learn different strategies to heal themselves– all looking for answers. Answers the pharmaceuticals, manufacturers and agri-business just are not providing. And have never provided… slowly are we realising the pills, potions, quick fixes, shakes and lotions have obviously just not worked… ever. 

So where do we go from here?

Welcome to Wholefoods. Or perhaps a better welcome is: welcome BACK to wholefoods. Our grandparents and their parents may have known a thing or too after all…..

What are ‘ wholefoods’? Is this another catch phrase/fad used by the clever marketers? Well yes, in some cases – so buyer beware…always beware!.. Stear clear of food coming in boxes!!!

A wholefood is all about REAL FOOD. It is food that nourishes the body. It is food that nourishes the mind. Do you think the food you eat does not absolutely, directly affect how the mind thinks? hmm think again…. The whole is in the part and the part is in the whole… who can it NOT affect our minds as well as our bodies?

  • A wholefood is food that fills you up-  the body knows when to stop….
  • A wholefood is food that tastes like heaven would!
  • Wholefood is made from natural ingredients with little to no genetic modification from man. Man has NEVER been able to produce a food better than God has. Never.
  • Wholefood is food kept as close to it’s natural state as possible in the cooking process. And when cooked, it is cooked gently to reduce loss of nutrients.
  • Wholefood is food made from ingredients that care for the environment, sustains the beautiful planet we live on and the magnificent animals that have helped to produce it.
  • Wholefood is food that HEALS.
  • Wholefood is simple food using simple ingredients.
  • Wholefood is not lumped into a box- it can be raw, cooked, slowcooked, baked, dehydrated, gluten free, containing gluten, ancient grains, vegan, meat… 
  • Healthy food is wholefood. It is not from a box in the middle of the supermarket aisle, nor has it been pulled apart as a singular source with added ‘ nutrients’, artificial sweeteners, additives, fillers, colours… 
  • Wholefood can be UGLY to look at.. but the tastes are like little explosions of deliciousness in your mouth!
  • Have you ever wondered how so many people, myself included, can sit down and eat an entire takeaway pizza all to myself..and still feel hungry? I am not a large person- nor am I overweight. But I can do that at the drop of a hat. Easy. 

 

Why?

Here is why I can do that, and likely so can you...: The great majority of ‘ food’  produced by manufacturers and large scale agri-business today is virtually devoid of any nutritional content at all. 

What results is that you and I, are able to….. eat and eat and eat. We eat huge amounts of this stuff ‘they’ call food..but we just don’t get full. Not even after one entire family sized pizza. We are still hungry. We are consuming huge amounts of calories ..devoid of any goodness.

We are overfed and undernourished. 

Let me repeat that:

We are overfed and UNDER nourished.

Marinate on that a moment. Could it, in fact, be true? Does that seem a fair call? It certainly seems that way to me. 

It is little wonder so many of us are painfully overweight, obese and morbidly obese. SO much so that ‘overweight’ is normal today. Why is it so hard to lose that extra 5kgs for those of you out there who exercise and keep relatively healthy? ??? Look at the quality and type of the food we eat… the results are speaking for themselves.

We are all in the same boat. Those who want to lose that 5kgs to those who are morbidly obese. It is time to take back ownership of control- and you CAN do it. One step at a time.

You are not alone. 

Take your life back- now!

Organic Coconut Power Balls

My coconut protein power balls help combat those mid morning cravings, and mid afternoon slumps. And work for pretty much any time of the day … if we snack, we might as well snack on food we know is healthy, and food we have made ourselves. Right?

Cravings can happen when the body’s blood sugar levels drop too far. Once blood sugar drops too far, the body takes over and seeks food high in carbohydrate (sugar) because it knows this type of food is the fastest ‘hit’ for immediate energy. Think breads, biscuits, chocolate, sugar… these all produce an immediate ‘hit’ in energy, or ‘high’ ….shortly followed by those ‘crashes’.

These ‘high’s and low’s’ are ‘normal’ for many people eating the way many people eat today.

We can avoid them by ‘smart’ eating. My organic coconut power balls are what I call ‘smart food’.  Avoid the yoyo effect of ‘high’s and lows’ which result in exhaustion, mood swings, irritability, weight gain, illness…by preparing snacks like these! Delicious and easy to prepare you might be amazed at how simple it actually is to eat well! HERE are other easy, delicious snacks to prepare for the week at work; for the kids; for social occasions.

All my RECIPES are made from natural and healthy ingredients, easily sourced from either the supermarket, health food shops or even online.

My organic coconut power balls consist only of ingredients that are good for you; they are high in protein; high in essential fats and contain NATURAL sugar. Natural sugar in moderate amounts is OK for most people but always try to keep sweet treats to a minimum, even when they are ‘natural’ . Unless you are some kind of elite athlete, chances are you, like me, eat too much sugar. Let’s get real on that :) My organic coconut power ball is good for a snack, and one is enough as a snack- so always be mindful of ingredients and quantities if you really want to have a balanced ‘healthful’ diet.

The great thing about my power balls is this:  because they have a balance of essential fats and proteins, those fats and proteins balance the release of the natural sugars into the body and brain. They slow the release of sugar down. This is a good thing! Because nutrients are released slowly, we are less likely to experience those ‘highs and then lows’ from other carbohydrate sources. We are then satisfied with a delicious sweet snack- satisfying that sweet craving or desire. The feeling of fullness or satisfaction lasts longer- until the next meal, be that lunch or dinner. We stay balanced in thought and nutrition so therefore function more efficiently. No more bingeing or spending all your time thinking about food!!

What You Need:

  • 1 Cup Organic Almonds. (activated is best) – Ground them. Or you can use almond meal which is simply ground almonds.
  • 1.5 Cups date paste. (Date paste is just dates soaked in water 1:1 ratio for 6-12 hours then blended to make a paste).
  • 1 Cup dairy free protein- use pea/hemp/rice. Non flavoured. Make sure there are no added ingredients.
  • 1 Cup shredded coconut
  • 1 Cup Cashews (activated is best.) Cashews give a mixture a creamy taste and texture.
  • 3/4 Cup Brazil Nuts (activated is beast)
  • 1 Cup shredded coconut.
  • (Optional) Dried fruit like sultanas, goji, inca, dried apricot….

How To Make It Work:

Ground all nuts in a food processor or blender. I ground mine to a ‘flour’ consistency for this recipe but you can have chunks if you prefer that consistency in your powerballs. Chunks can be quite a nice surprise.  Once the dry ingredients are ground, add the remainder to your mixture. I recommend mixing in a bowl with a wooden spoon. The date paste will bind the mixture, add water if you find the mixture too dry. A wet mixture is good as your balls or bars will dry in the fridge once covered with desiccated coconut or coconut flakes.

Use gloves or wet your hands when rolling into balls to avoid the mixture sticking to your hands. Make sure you taste test along the way. If you want your mixture tasting sweeter add some raw honey, or more dates/date paste. This is a raw recipe- so be aware that how your mixture tastes is pretty much how the end product will taste.  Add any extra treats here like goji, sultanas, dried apricots…..

Make into balls small or large depending on your preference.

Roll your balls in desiccated coconut or coconut flakes, then place in a container for storage. Store in fridge for approx 2 weeks.

Alternatives: 

Conventional oven: Shape into bars as seen in my image above with the green tea. Place on a wire rack in an oven set on the lowest setting possible- approx 60C. Leave in the oven, with the door ajar for 30-60 minutes. (You can also do the same with the balls if you like) The balls and bars are ready when there is a slight coating on the outside, ever so slight. Keeping the door open will keep the oven at approx 40C which qualifies for raw food. Best to keep an eye on them every 30 minutes to be safe. Allow to cool and store in the fridge.

Dehydrator: Shape into balls or bars and place on trays at 42C for approx 3 hours or until the outside is slightly dehydrated. Allow to cool and store in fridge.

Organic Coconut Sugar

I quite like fresh coconut.

You may have noticed a number of my recipes include coconut water, coconut milk, coconut oil, coconut flower nectar, coconut cream, coconut flakes, desiccated coconut, and coconut sugar. …the list goes on…:)

 Fresh is always best. Coconut water for example, is easily accessible from any supermarket in the fresh produce section as a fresh, real McCoy young baby coconut. Young coconut is white on the outside, very different to the brown skin of an older coconut. Old coconuts have very little water and thick flesh inside. These are not the coconuts I use in my kitchen. You just need a butchers knife to crack the sucker open. I can do it, so you can too. Coconut water sold in cartons and cans has pretty much lost all nutritional benefit and is just another form of lolly water, despite them having only one ingredient listed: coconut water.  Preservatives are added to keep the coconut water shelf stable- thus rendering it …lolly water. (Makes you feel healthy buying it though..as do a whole heap of other non healthy items marketing as ‘healthy’ on our shelves, with a very ‘healthy’ $ value. Buyer beware). I still drink it occasionally but I am aware that it is just another form of lolly water, and that is my choice, fully armed with this  knowledge! Better than any fizzy drink hands down.

I’ve been playing with organic coconut sugar a bit lately. I made some delicious icecream..yummmmmm. If you like toffee, go buy some organic coconut sugar from your local health store. Sugar is sugar my friends. We all eat too much of the stuff and I am not a huge fan but sometimes a bit of extra sweetness is nice. Choosing Organic Coconut Sugar could be a more healthful option of you are starting on the road to healthful eating, have a sweet tooth, or just want to add another great ingredient to your more healthful pantry.

Coconut Sugar is a little ‘brown sugar’ tasting. It is mineral rich; has a low GI of 35 (so is less likely to spike blood sugar levels resulting in cravings and mood swings..) and is a great cane sugar alternative, well actually… any sugar alternative especially table sugar. Throw that shyte out!! Right now!!) Coconut Sugar is produced from the coconut palm blossom before the nut is formed. It is a crystallised version of coconut flower nectar which is also deliciously sweet. Coconut Flower Nectar comes in a syrup form, much like golden syrup- but much healthier.

Coconut sugar, unlike table sugar or brown sugar, is minimally processed and has not been filtered. Again, if you like toffee- you will like coconut sugar.

Coconut Sugar is a rich source of potassium, magnesium, zinc and iron.

Compared to brown sugar, Coconut Sugar has twice the iron, four times the magnesium and over ten times the zinc!

Coconut Sugar is unfiltered, unbleached and preservative free, unlike regular table sugar or brown sugar.

Coconut Sugar has a sweeter taste to my palate than regular white sugar. So halve it in your tea or coffee if you add it. (You can always add more if need be; better still make a plan to ditch all sugar altogether in your hot drinks :) ) But one step at a time- switch to organic coconut sugar in the interim. 

I use it in baking, in smoothies and definitely in my icecreams. Don’t add as much coconut sugar as the recipe calls for- taste test along the way. They say we can use Coconut Sugar as a 1:1 replacement to other sugar, but I say, try a little less. Again, you can always add more if needed, but you cannot take it out once you have added it! And again, work on taking sugar out of your diet altogether!! Once it is removed, you will really taste natural sugars and become aware of the excessive sweetness many of us are now conditioned to. It is frightening!! Wean yourself off all sugars, or better still go cold turkey under the supervision of your chosen medical practitioner- withdrawal symptoms are very likely.

I have added pictures of treats I have made using coconut sugar. They look tempting don’t they? They are delicious and use only the best ingredients, with minimal sugar. You can do this too! Recipes are linked above in the second line of this article if you want to try some out!

EASTER-Homemade Chocolate- RAW

Easter and chocolate go together like milk and honey, peanut and butter, Christmas and eggnogs. Personally I don’t know where, when or how Easter got into bed with chocolate but as we are human, and most of us have a soft spot for sweetness- it is most likely to have something to do with marketing… I mean what has the Easter bunny got to do with Christ dieing on the Cross to save our Souls?!!

This Easter, as I am fully into making and enjoying food I make from home, the same has occurred with chocolate. I’m making it. And it IS fun!!

I’m sharing this absolute basic raw chocolate recipe with you. Use it as a basis for all chocolate and then add your chosen flavourings, and other treats to spice things up as you go. Seriously life couldn’t be much easier!

Raw chocolate for Easter

Basic Raw Chocolate Recipe:

  • 1 cup of coconut oil for a lighter chocolate or
  • 1 cup of cacao butter for a darker cacao chocolate.
  • 1/2 cup raw cacao powder. Use less if you like a light chocolate.
  • 1/2 cup coconut sugar. Blended in coffee grinder to make very fine.
  • 1 teaspoon vanilla extract
  • Pinch of Himalayan Salt.

How to Make it Work:

  • Grind coconut sugar in a coffee grinder/spice grinder to form a fine powder.
  • Melt either your coconut oil or cacao butter.
  • Place all ingredients into a blender. Put wet ingredients in first to ensure a smooth blend.
  • Pour into chocolate molds. Set for 15-30 minutes in freezer.
  • Done. This is the absolute basic chocolate recipe. From here you start creating!

Notes:

Use cacao butter for a rich, dark chocolate. Cacao butter has a higher melting point so chocolate will not melt as fast as chocolate made with coconut oil. ALL homemade raw chocolate will melt at room temperature much faster than store bought chocolate. Keep it in the freezer.

Use coconut oil for a lighter, creamy chocolate. Add coconut flesh, avocado or the top off coconut cream tin for even more creaminess.

Add any filling for a change: try whole almonds, hazelnuts, nut butters, coconut cream, essential oils, chilli, Tabasco, buckwheat for a chocolate crisp, salted caramel, mint, strawberry coconut cream filling…. the list goes on!

When making chocolate with a soft filling- choose basic molds. Choose the regular molds from the ice tray when making chocolate with a soft filling.  When you choose fancy molds make solid chocolates. Fancy molds break easily when you try to release them- you end up with something like this if you make fancy molds with soft fillings:

Not exactly something you would serve up to guests!! LOL.

Fancy molds- make solid chocolate. If you like to make solid chocolate more ‘interesting’ add a couple of drops of natural essential oils like peppermint, or lemon, or orange. I use Doterra essential oils. I only need a couple of drops per chocolate mix.

Mint crisp chocolate: chocolate with activated buckwheat and a couple of drops of doterra mint oil. YUM.

Bounty:  These are naked bounty bites. To make these all you needs are:  coconut flakes, blended in a vitamix with some water and a little coconut cream. You can use the flesh from the young coconut and its water as a 100% natural bounty bite. Pour into icecube trays and set.

Then pour chocolate over the top.

Alternatively line icecube trays with 1/3 chocolate, fill the middle with your chosen filling- in this case coconut- set in the freezer (about 15 minutes) then complete with final topping of chocolate!! Keep in freezer!

Salted Caramel Chocolates:

Ingredients: 1/2 cup cashews (soak for 2 hours in filtered water); 1/2 cup dates soaked in warm water; 1/2 teaspoon of salt- or more if you like really salty caramel; 1/2 cup coconut sugar; water to blend.

Blend all ingredients until creamy and smooth. Layer between chocolate- recommend using basic molds to ease popping out when set.

Keep excess salted caramel in freezer for use in icecream, on brownies… however you desire.

Soft Mint Filling: 1 cup soaked cashews; 1/4 cup desiccated coconut; 1/2 cup almond mylk; 1/4 cup coconut oil; 1 cup baby spinach leaves; big handful of mint leaves; a drop of peppermint oil-optional.

I tried whole strawberries in some of mine. That didn’t work so well as I didn’t taste the strawberries- they weren’t sweet. Make sure you taste as you create. When we make raw, wholefood- each time the recipe may vary depending on the flavours of the natural ingredients. So expect to get your hands dirty and play in the kitchen! Have fun making treats that are high in fat yes but WITHOUT toxic refined sugars, preservatives and other chemicals.

Wheat-Free Weightloss PIZZA!!!!

Who ever heard of losing weight AND eat pizza?! Now you can.

Who ever heard of a pizza without a bread base?! Now you have!

Who ever heard of eating two slices of pizza and feeling full without the sluggish, lethargic experience! Now it is here!

Who ever heard of a pizza so delicious that you wouldn’t even know it was good for you- unless you made it yourself! Here it is!

If the thought of eliminating wheat from the diet sends you into a tail spin, then you are not alone. We have grown up eating white bread, toast, sandwiches, white flour cakes and cookies. Wheat is in pretty much everything premade for us, and in all honesty, most people buy premade, microwaved meals these days. Wheat is in muffins, wheat is in microwaved meals, wheat is in sauces. You name it, the product likely contains wheat if man has anything to do with it. Weetbix, cereals, buns, wraps…

But…!!!!

Our grandparents ate wheat. There was nothing wrong with them?!!

Our parents ate wheat, there was nothing wrong with them?!!

Really? Is cancer really an hereditary disease?-That has been proven wrong on so many counts. What could it be? Could the food we are eating be a contributing factor….?? Could it ? Is food a common denominator? Food? I mean- we all eat food. And we all drink water. If wheat is ever more prevalent in the foods we eat, more so than ever beforecould it possibly be worth investigation? Start investigating for yourself…today.

But why pick on wheat? It is true that 40 years and more ago, people ate wheat regularly. But what has happened to the innocent little wheat in the late 40 years is nothing less than atrocious. More people need to be made aware of the gross genetic modification that began taking place only 40 years ago, and continued until only just recently without you or I being any the wiser. Genetic Modification without examining the effect on human consumption. Producing wheat that grows smaller, faster, and closer together. Wheat that is resistant to toxic chemicals and companies such as Monsanto owning strains of now ‘supergrain and super wheat’ resistant to their own pesticides and chemicals; designed to kill all other seeds in their path. As well as contaminating farmer’s land either side of ground owned by Monsanto, them bullying small authentic farmers into submission through lawsuits and loss of revenue, and blatantly spraying other fields with their genetically designed chemicals, pesticides and herbicides. Literally poisoning the land and people.

Start to do your own research and find out why our grandparents could eat wheat; but why we are now crazy to allow it in our homes, let alone eat the stuff- in whatever form it comes in.

It is actually not that hard to get wheat out of the diet. At first, it may seem overwhelming; but doesn’t everything new seem overwhelming at first? Take it one step at a time. The ball starts rolling pretty quickly and it can become a whole heap of fun experimenting with food again. Not to mention how fantastic a person feels when wheat is removed completely from the diet! A little creativity is needed- but then again we now have google, instagram, pinterest, facebook and loads of other sites where you can google wheatfree recipes! 

As opposed to having the mentality that we are missing out- flip it! Start to ponder on the exciting options that start to unfold when we take wheat out of the diet and replace it with wholefood filled with nutrition! The options are endless! All it takes is that imagination moving into first gear, and some visits to different cafes to get ideas! If you are on the coast try MarieAnita’s and The Paleo Cafe– both in Burleigh.

When we choose wheat free, we can still eat all our favourite recipes- we just throw out the wheat and substitute in wheat free options! And here is one of my favourites!!

Mouthwateringly delicious….PIZZA!!

I have used mozzarella cheese in my recipe. As a celiac I cannot tolerate the poor excuse for a beverage- milk – sold from the shops. Research cows milk and start understanding how nutritionally devoid pasturised cows milk is…-Make your own informed decision here too. You might opt to stop drinking milk from cows also- but one step at a time ;).. I can enjoy a little hard cheese as a celiac as lactose content is not so high. If you want to know a great and easy healthy alternative to cows milk- HERE is a recipe for how to make your own nut mylk. Easy. If you can find raw milk- usually sold at markets or the organic shop- get that. Raw milk is the real mccoy.

The base for my pizza is made from cauliflower, predominantly. I kid you not and please dont knock it till you try it. We have to give stuff a go before we turn our nose up- give it a go! I didnt believe how amazing this was going to turn out! It was a hit! Noone knows what its made of unless you tell them! Tell them after!

What you need to make it work:

  • 1 head of cauliflower
  • 3/4 cup virgin coconut oil (never olive oil as you are going to cook it)
  • 2 large eggs
  • 3 cups shredded mozarella cheese
  • Your favourite pizza toppings- go wild! spinach, onion, fresh herbs, meats, nuts, pineapple, capers, anchovies, sundried tomatoes, capsicum,garlic, mushrooms- use loads of colour! …. the list goes on.
  • Tomato paste. You can buy it but make sure you buy a clean tomato paste like Leggos. Use one canister- or two if you really like a tomatoey flavour Alternatively you can use a delicious pesto (homemade preferably too) for a more nutty pizza.
  • 1/4 cup grated parmesan cheese.

What to do to:

BASE:

  • Preheat oven to approx 120C-140C.
  • Blend the cauliflower head in a powerful blender. I use a vitamix. If you do not have a blender- you can cook the cauliflower in water. But the issue here is you lose most of the good nutrients in cooking however it an option for people without blenders.
  • The vitamix with break the cauliflower up into a wet mush; mash if you have cooked it.
  • In a bowl add the cauliflower with 1/4 cup coconut oil, eggs and 1 cup of mozzarella cheese; season with Himalayan salt, pepper and any herbs you might like in your crust. I often use cayenne pepper to aid with thermagenic digestion.  Mix until it is blended with no chunks.

Lightly coat a pizza pan or large rimmed baking sheet with coconut oil.

Pour the cauliflower mixture onto the pizza pan. This is the base for your pizza. Press it into a pizza base not more than 2 cms thick. Mould the edges higher to form a thick crust pizza. I’m a thin crust pizza girl but try this with this style first, before you go all thin on me. Trust me. :)

Bake for approx 20 minutes, or until lightly golden brown:

Remove pizza base from the oven and start to decorate as you would a pizza from the shops or made from home! ie with all your favourite ingredients!

TOPPING

  • Start with your pizza base. Use the tomato base, pesto base or whatever base you like for your pizza. I used a traditional tomato base for this pizza- and used the leggos tomato paste.
  • While the pizza base was browning you could have been cooking up any meats, browning nuts, sauteeing onions and garlic- if you like those on your pizza so they are ready to just add once the pizza base is ready.
  • There are no rules to pizzas- add the ingredients you love.

I used baby spinach, sauteed onions and garlic, sliced mushroom, celery, pepitas and sunflower seeds, capsicums, fresh pineapple- pretty much whatever was in my fridge at the time. Loads of greens. If you are not a cheese fan- you don’t have to add all that cheese- I often have cheese free pizza – on the topping. In the base it is necessary to bind the cauliflower. Keep that in mind :)

I add poached free range paprika chicken, cayenne pepper, the remaining mozzarella cheese, fresh oregano and chives from my balcony garden, H salt, pepper and drizzle with some- not all- of the coconut oil. Just use what you think necessary. The oil is for browning. You don’t need it all.

Tip- add less cheese on top;  and add more if you think you need it once it starts melting. We can always add, we can’t remove once its on and melted. Nothing worse than a typical American style over cheesed pizza. Gross.

Pop pizza back in the oven and bake until the mozzarella melts. Approx 10-15 minutes. Voila. Heaven by pizza!

Guilt free, delicious pizza! 

Have you even wondered why some people can eat an entire family sized pizza from the pizza shop and still be hungry? 

It is actually not that uncommon. Why. The pizza base from a traditional pizza is wheat based. Wheat is now devoid from any beneficial nutritional content for human beings. We are overfed and undernourished which is why so many of us are getting fatter and fatter, but we are still hungry…we are  undernourished. We think that if we eat MORE we will feel full. We wont- if we keep eating that stuff they call ‘food’ out there. Most if it is wheat based. We will still feel hungry, we will still eat more, and we will still grow fatter and fatter if our choice in food types does not change. 

It can be as simple as swopping our ingredients. It is not that hard- we just need someone to show us.

I hope I have shown you an option for pizza that will blow your mind and taste buds! My 120kg fiance can eat 2 family sized pizzas from the pizza shop in one sitting. He could only finish three pieces of this pizza before we was chocker block full.!! The difference here is that this pizza is made from ‘wholefoods’. Wholefoods are foods that are made largely without man messing with them. So these foods have the nutritional content that our bodies crave. We dont feel heavy and lethargic after eating wholefoods. We feel satiated, and great! We feel energised! Food is supposed to be our fuel- why are we filling up on the cheapest, poorest quality fuel- not designed to run our motors, nor feed or bodies or minds.

This pizza is exploding with flavour and goodness and total yumminess that you just won’ t believe it till you try it! Your body will love you for it and your mind will wonder how it is possible!

Many of my followers are vegan or vegetarian- so omit the animal ingredients and adapt the recipe to suit your dietary requirements. We are all looking for health. We can all learn from each other.
