Poached Free Range Organic Chicken with Mango Salad

Whole Food – easy and fast, fast and easy!! Team- this couldn’t be easier if we tried to make it easier!!! Easy, nutritious, delicious, and GREAT for you!!! ALL GOOD!! Free from any nasties, bad cooking techniques and NO extra or hidden calories. Food HAS to taste spectacular or why bother eating it?

So many people say they don’t have time in the kitchen to cook healthy food.. well this takes all of …very little time so no excuses! This can be a great lunch or dinner option for the whole entire family, or just one person. I cook for one- its very easy to get it right – just portion out your meats before you freeze them. All you need to do is take your choice for dinner out of the freezer of the morning you plan to consume it. Your meat will be ready to cook when you get home from work and take the same amount of time you would have to wait in line for some disgusting fatty fast food.

I use free range organic chicken – you can get it from most supermarkets in Australia now; find a great butcher; or order it online- even better!! I poach my chicken which means I cook it in water with a little Himalayan salt, and add any seasoning I feel like. I use a lot of paprika. I like it hot. If you have a little BBQ- BBQ your chicken!! As Summer approaches fast- this is a fun option!!

The salad is self explanatory I hope – add your favourite alkalising greens, sprinkle with some other colours (veges) if you feel like it and add your mango diced. Some people don’t like fruit in salads, so for those of you who fall into this category.. just don’t add it!! I obviously do! Your kids could make this meal- it is so easy..in fact, why not get them to help you!! Too many children these days have no idea how to make basic foods. If they get involved, they might start to actually enjoy their greens!! Maybe 😉

If you like salad dressing- don’t buy the supermarket dressings!! Make your own from Olive Oil and Fresh Lemon Juice!! Fresh, zingy and alkalising. Season with Himalayan salt, pepper, fresh herbs and totally enjoy this refreshing Summer meal!!
