Coconut, Blueberry and Chia dessert

The sun continues to shine up here on the Gold Coast of Australia! ahh this is the life! So very blessed and in love with Living Life Outloud!! Are you too?! And along with sunshine, comes Spring then inevitably Summer nipping at it’s heels. So as the temperatures continue to increase, I’m focusing even more into weightloss and fatloss geared around wholefoods. “Wholefoods” just meanreal food. You know, the kind God makes as opposed to man.

  • You won’t find wholefood in a plastic container or cardboard box.
  • You wont find wholefood with a nutritional label stuck to the outside of it; God actually knows what he is doing.. as opposed to man.. He doesn’t care for your money :) He cares for your health :)

So the recipes I’m encouraging and enjoying myself even more at this time are clean, delicious, nutritious foods. And I continue to share them with you xx. This one I am sharing with you is a cracker! Anything coconut is a blessing! Coconuts have a plethora of minerals and nutrients our bodies ache for, and are wonderfully hydrating with a very low sugar content. Please buy the fresh young white coconuts shaped like a cone from the supermarkets as opposed to the packet coconut water for sale and very popular at the moment. (Also cheaper than the packaged pasteurised version :))  Buying the real thing is always, hands down, 100% better than buying anything manipulated by man! I realise the cartons say they are 100% natural however, be aware that this packaged coconut water has been pasturised so that it does not go off- Therefore, it is no longer 100% natural.

Also realise that there may be added ingredients to your cartons, but as these added ingredients make up for less than 5% of the total product, they do not need to be listed and can therefore be advertised as 100% natural when, in fact, it is not. Marketing. They want your money. And they get it.

Like the look of my chia dessert? It is good for breakfast, as a healthy snack, or dessert. There is no sugar added and is completely dairy free. I am a firm believer the adult human body does not process dairy well, in fact, I believe pasturised dairy is processed as a toxin by the adult human body. Feel free to google that and start exploring for yourself :) So my  delicious chia snack is made without the stuff I dont like, and loaded with all the goodies my body does like!  All ages will enjoy this and will find it great for the body; delicious on the palette and easy to digest which results is active mind, bodies and souls. Happy days!!

Once again, I make food that is easy, non complicated, delicious, and designed to aid weightloss whilst being scrumptious and suitable for the entire family!

What is in my Coconut, Blueberry and Chia Dessert:

  • water and flesh from a young fresh coconut. Or you can use 400ml canned coconut cream.
  • freeze dried blueberry powder- if you cant find this, use fresh berries instead- fresh is best!
  • 1/4- 1/2 cup black chia seeds
  • a couple of drops of organic vanilla essence
  • stevia or rice bran syrup to taste if you like extra sweetness- try without this first. Always try with no added sweetness- this way you will stop ‘needing’ the sweetness we have been brought up on. Natural is always better. One day you will find you just can’t stomach the sweetness most people think they ‘need’. Take it one step at a time. If adding this type of sweetness is a step forward for you, then this is great. Now, begin to add less and less.. one day, before you know it, you will no longer want to add it :)

How To Make It Work:

Very simple.

Using the flesh of a young coconut and it’s water:

  • Just blend the two together in a blender to make a creamy, viscous ‘cream’. This is coconut cream- without being canned! Pour into a bowl.If you have opted to use fresh berries you can blend them up with the flesh and water, or you can add them whole to your mix. The taste will not be different, but the presentation will be. So this is up to you!
  • Pour cream  into a bowl; add blueberry powder or fresh berries; pour in chia seeds and vanilla.
  • Stir.
  • Allow chia to swell- approximately 20 minutes. The mixture will becoming thicker. Add more chia is you feel you would like a thicker snack. Taste test and add your chosen sweetner if you want it you like a sweeter taste.
  • Pour into serving containers. Allow them to set fully in the fridge for 2 hours or more.

Using coconut cream from a can:

  • Pour cream  into a bowl; add blueberry powder or fresh berries; pour in chia seeds and vanilla.
  • Stir. That’s it pretty much!!
  • Allow chia to swell- approximately 20 minutes. The mixture will becoming thicker. Add more chia is you feel you would like a thicker snack. Taste test and add your chosen sweetener if you want it you like a sweeter taste.
  • Pour into serving containers. Allow them to set fully in the fridge for 2 hours or more.

Chia was used by the Mayan’s as a staple part of their diet. Chia seeds are so well rounded in nutrients that, when food was scarce, chia and water could sustain the Mayan’s for days. By adding wholefoods like coconut and chia and many other foods made by God to your diet, you fuel your body with quality nutrients.

If you wouldn’t put the cheapest petrol into a Maserati why would you add cheap, dead food, which is supposed to be fuel for your body– to your body? Your body is worth quadruple times the value of any Maserati on earth. Your body is the most valuable thing you own on this earth. Without it, where would you be? Why not give it what it needs?
