Here is an incredibly easy dish that anyone can whip up in a matter of minutes when they come home from work hungry. Fresh seasonal veges, lightly sautéed in oodles of coconut oil or grass fed butter with mountains of garlic to keep the vampires away, as well as build up the immune system- double whammy!!

The temperatures are soaring where I live, so heavy foods are just not kosher thanks. My body wants light, fresh, healthy meals so it can focus on dealing with the heat. I don’t want to give it food that will only cause me to get ….even more hot… that would be wrong on so many levels… bahahahha

Another thing- if you cant laugh at yourself, then you certainly can’t laugh at much in life… enjoy your light foods, and enjoy a light attitude in life… life becomes so much more pleasant and FUN!!

So you have come home on one of these stinking hot evenings without a meal planned.. oops– BUT as you went to the markets in the weekend to stock up on fresh local, cheap, organic veges… you have a fridge stock piled full of crisp, delicious seasonal veges ready to be eaten…

How to make your veges SEXY!

If you don’t want a salad.. and let’s face it some nights/days we do want some cooked food.. this is a recipe perfect for warm al-dente food. I saw this in a workshop I was a participant of with Mona Hecke as the presentor. I think it needs to be shared far and wide. It is so simple, so easy, and oh so delish!

Use veges that are in season now!

  • Asparagus 1- 2 bunches.
  • Garlic 2-3 cloves.. the more the merrier if you ask me!
  • Coconut oil or grass fed butter. – I use quite a lot of either of these. Love the stuff.

In a flat pan, melt the butter and sauté the garlic… yum that aroma!!! Brown the garlic- the pic- that is important for presentation.

THEN add the asparagus and sauté till only just al-dente.. not long at all. I like my veges still crunchy. It keeps their integrity.. life is good with integrity….

Dice up a selection of colourful in season veges:

  • Egg plant
  • Red Pepper
  • Onion
  • Baby tomatoes

-whatever you have in the house! This was one version.. add more!!! –  add mushroom, zucchini, carrot, beetroot, green beans…

Dice them chunky– you want big bits. Man size!

IN a wok, stir fry them lightly with coconut oil and loads of garlic again.. Himalayan salt (contains 84 trace minerals no longer available in foods we eat..) and a bit of cayenne because I love it.

Only stir fry for a short time, 5 min max… don’t over cook!! Al-dente everything with this dish!

Voila- dinner is ready! In a flash!

Parmesan cheese… you need it.

Grate an ORGANIC parmesan cheese over your dish once it is plated up, add a sprinkle more Himalayan salt for those minerals and a touch more cayenne to spice up your life.. some grated black peppercorns and dinner fit for a king is served.

Cant handle veges only…want some meat?

Sure!! It is this easy: Stir fry some organic free range chicken in with the garlic and butter/coconut oil.. EASY!!!!YES??.

This dish is perfect made for one- or served as part of a dinner party. Your guests will LOVE it!!!

And .. so long as you don’t heat the butter/oil too high- this dish can still be called RAW. If it stays under 46C – its technically RAW. Happy days for all the raw foodists out there. Me? I’m easy raw or cooked- I don’t like boxes and think it is dangerous to follow any diet too closely.. diets are diets- made by man for financial gain, designed to fail especially if not sustainable. 100% raw is not sustainable for most people, nor is it recommended by many health practitioners- such as those with a Chinese medicine background. More raw foods in Summer makes sense as it is hotter out there, and we naturally gravitate towards lighter, meals (raw sweets are NOT LIGHT….) In the Winter, we do like heavier type meals- but they don’ t HAVE to be ‘ heavy’ ; they  CAN be gently cooked using slow cookers- resulting in soft, tender, easy to digest warming meals…

Think about food logically and don’t let the marketing get you- those marketers are very clever and are paid well to suck us in.. come out of the matrix my friends!!

Want to eat pizza AND still lose weight? You CAN.

Can you eat a whole entire pizza in one sitting…and then some? I bet you CAN’T eat a whole entire pizza of MINE.

Ever wondered WHY you CAN eat a takeaway or store bought pizza all to yourself, and still be hungry? ..

Would you wonder how I can eat an entire one of those pizza’s an STILL be hungry an hour later..? I’m all of 60kg, 170 cm tall, 16% body fat = pretty lean.

I will give you my reasoning.. you can ask yourself if this makes sense:

THOSE pizzas out there..made from wheat, or even worse..those ‘gluten free’ pizza bases which are made up of ingredients designed for the rubbishTHOSE pizzas are nutrient devoid, and calorie HEAVY BABY. Calories that are useless to the body and can only be stored as FAT.  THEIR calories just have no functional use inside these brilliant bodies of ours.. = empty calories. Dead calories. Useless food.

So what happens is when we eat that ‘stuff’…we add calories that only be stored as fat…but because there is no real nutrient value to that ‘stuff’ called food. We are still hungry due to lack of nutrients so the body asks for more- searching for the nutrients it needs! We are not pigs… we are just hungry for quality food! Stop buying that takeaway, frozen, store bought rubbish.. let me show you how easy it is to make your own– really fast!

How about it- can you process that information? Does it potentially hold any glimmer of truth for you? If so, start researching these thoughts!!

I will NEVER EVER desire that cardboard pizza from shops – be they takeaway or the expensive versions from health food shops.. they are all made of crappy ingredients that do absolute JACK for the body aside from clog it up… save your money and time and make your own! It is the only way to ensure deliciousness and to know what is in the food you eat.

BTW – did you know that a gluten free base… is not necessarily a gluten free base.. nor is a gluten free sauce a gluten free sauce etc etc … you see… it can be called ‘glutenfree’ if it is 95% gluten free. That means 5% of whatever you are buying is HIGHLY likely to have gluten in it. IF you are celiac.. as I am- you will KNOW this as truth due to the reaction you get from these ‘health’ products. Same goes for ‘organic’ ..and ANYTHING else. Its NOT guaranteed 100% truth.

So be aware of that…..

Remember that when making any wholefood.

Chicken, Cashew and Camembert Wheatfree Pizza with Smashed Avocado.

Topped with Organic Gouda Cheese, sesame seeds and roasted cashews in coconut oil.

Add cranberry sauce if you are really being a tad riské ..

What you need to make it work:

  • 1/2 to 1 head of cauliflower – go for 1/2 to begin with- add more cauliflower if you need more later.
  • 2 large eggs
  • 1 to 2 cups shredded mozarella cheese
  • Your favourite pizza toppings- in this case we are choosing: tomato paste, garlic, onion, camembert cheese, chicken(stir fry it first or poach in water), fresh avocado, fresh pineapple pieces, herbs- cayenne pepper, Himalayan salt, pepper, cumin.
  • Tomato paste. You can buy it but make sure you buy a clean tomato paste like Leggos. Only use a very thin layer.
  • 1/4 cup grated organic Gouda Cheese.
  • Cashews- stir fried in Coconut oil and garlic for extra deliciousness.

What to do to:

BASE:

  • Preheat oven to approx 120C-140C.
  • Blend the cauliflower head in a powerful blender. I use a vitamix. If you do not have a blender- you can cook the cauliflower in water. But the issue here is you lose most of the good nutrients in cooking however it is an option for people without blenders.
  • The vitamix with break the cauliflower up into a wet mush; mash if you have cooked it.
  • The ‘wetness’ of each cauliflower cannot be determined until you mash it! If you have a wet cauliflower- you will want to ‘strain ‘the excess water out. Use a nut bag- as I use in my nut mylk recipe.  Squeeze out the excess wetness. Magic- you have just dried your base out significantly.
  • In a bowl add the cauliflower with , eggs and 1- 2 cups of mozzarella cheese; season with Himalayan salt, pepper, cumin seeds and cayenne. I often use cayenne pepper to aid with thermagenic digestion.  Mix with your hands until it is blended with no chunks.
  • You want the base to have FLAVOUR adding herbs will be the kicker. Add herbs. Add seasoning. THIS is the secret to an out of this world experience!

Lightly coat a pizza pan with coconut oil.

Press the cauliflower mixture onto the pizza pan with your knuckles for an even thin base. This is the base for your pizza. Press it into a pizza base not more than 2 cms thick. Mould the edges higher to form a thick crust pizza. Make the base pretty thin so it cooks all the way through. If it is too thick it will stay wet.. we want a true to life experience with our pizzas to blow the minds of the nay-sayers!

 Bake for approx 20 – 40 minutes, or until golden brown. Go a dark golden brown. :

Remove pizza base from the oven and start to decorate as you would a pizza from the shops or made from home! ie with all your favourite ingredients!

TOPPING

  • Start with your pizza base. Use the tomato base, pesto base or whatever base you like for your pizza. I used a traditional tomato base for this pizza- and used the leggos tomato paste. Spread it thinly- too much will wet the base out.
  • While the pizza base was browning you could have been cooking up any meats, browning nuts, sauteeing onions and garlic- if you like those on your pizza so they are ready to just add once the pizza base is ready.
  • So for this pizza add crushed garlic, diced onion, diced and cooked chicken, camembert cheese pieces, chopped fresh pineapple, and cranberry sauce if you are being a tad naughty. Don’t ask me for a healthy cranberry sauce.. I don’t know one. … (Noone is perfect). Also add your herbs- sprinkle basil, Himalayan salt, pepper over.

  • If you think your pizza looks ready.. it is. All we need to do now is add the grated Gouda over top- just a touch.. and she’s ready. Add the roasted cashews in coconut oil too and more garlic if you love it!
  • Return your pizza  to the oven and allow the chesse to melt- this will not take long- all you are doing is melting the cheese and warming the topping- so don’t leave the kitchen!
  • When it looks sufficiently melted and smells heavenly- she is ready!

Use your pizza cutter to cut pieces, about 5 minutes after it has come out of the oven. This will allow the topping to settle  slightly.  Add fresh avo once its is portioned out- raw avo on a cooked pizza….YUM!

Use a knife to separate the crust from the edge of the base- the first piece if often a tad messy trying to lift from the pizza base- it is always the way right?! Be gentle with your pizza- she is not made of the usual ingredients!!

Realise a wheat free pizza is not a pizza you are likely to be able to pick up and eat with your hands- so let that go… the next day you may be able to though. As the base is cauliflower and cheese – The cheese binds your base– so once cheese hardens- its becomes more solid. But when it is warm it is soft. Comprendé?!

If this isn’t the best pizza you have eaten.. I’m a monkeys uncle.

Use this base for ANY of your favourite toppings. NEVER eat that dead-food from the shops every again and enjoy pizza any time, any day!

The workshop is filled with amazing people all wanting to have fun, and learn more about the basics of my style of food prep. So- I have a very cool afternoon planned :) It is chocka- block full of ideas, concepts and yummy food!!! Not a grain of refined sugar, refined flour..refined anything in sight! If anyone walks away hungry… I will fall over myself in disbelief.

My wholefood workshops are planned to be easy, and fun and designed for everyone to get their hands messy, sticky and tasty! It is my firm belief that this is the best way to learn– having been a ‘resistant’ cook for many years growing up I know what it is like to have no confidence in the kitchen- and no desire to be there. NOW – I love the place because I know I am creating the most tasty, delicious meals and morsels… and my food does not make me fat!!!

I long believed food made me fat. That just by looking at food I would put on weight. Even if I smelt food I would gain weight. No longer !!! As I grow in knowledge and understanding of INGREDIENTS, and how they affect the body and mind… what foods my body loves, and what foods my body just absolutely does not love….. food is now my friend. It is not the enemy.

So my friends! I share this and so much more with you in my wholefood workshops, on this page and beyond!! Very excited and so stoked you are all behind me. It really is very encouraging and I greatly appreciate it. I truly do.

Ok my friends. Here it is- the long and the short of it. My last post was in May 2014- it was all about ‘seasons’  in life. I took an unexpected ‘season’ off this site- so I have missed it, and you unless you are connected via instagram or facebook, in which case you will know I have been cooking up a storm!

Me- I have little patience for anything technical. This means the cleverness of blogs (I really don’t understand how this thing works.. ) I just lost my entire blog by pressing the F5 key to reload the page… so at this moment I am slowing my breathing down and focusing on relaxing instead of doing what I instantly wanted to do: throw this thing out the window and communicate telepathically with you all. So you see- we all need a good coach in life – even the coaches themselves!

I’m good in person. So I am going to do more of what I am good at! Being around people!!

Wheat-Free Weightloss PIZZA!!!!

Who ever heard of losing weight AND eat pizza?! Now you can.

Who ever heard of a pizza without a bread base?! Now you have!

Who ever heard of eating two slices of pizza and feeling full without the sluggish, lethargic experience! Now it is here!

Who ever heard of a pizza so delicious that you wouldn’t even know it was good for you- unless you made it yourself! Here it is!

If the thought of eliminating wheat from the diet sends you into a tail spin, then you are not alone. We have grown up eating white bread, toast, sandwiches, white flour cakes and cookies. Wheat is in pretty much everything premade for us, and in all honesty, most people buy premade, microwaved meals these days. Wheat is in muffins, wheat is in microwaved meals, wheat is in sauces. You name it, the product likely contains wheat if man has anything to do with it. Weetbix, cereals, buns, wraps…

But…!!!!

Our grandparents ate wheat. There was nothing wrong with them?!!

Our parents ate wheat, there was nothing wrong with them?!!

Really? Is cancer really an hereditary disease?-That has been proven wrong on so many counts. What could it be? Could the food we are eating be a contributing factor….?? Could it ? Is food a common denominator? Food? I mean- we all eat food. And we all drink water. If wheat is ever more prevalent in the foods we eat, more so than ever beforecould it possibly be worth investigation? Start investigating for yourself…today.

But why pick on wheat? It is true that 40 years and more ago, people ate wheat regularly. But what has happened to the innocent little wheat in the late 40 years is nothing less than atrocious. More people need to be made aware of the gross genetic modification that began taking place only 40 years ago, and continued until only just recently without you or I being any the wiser. Genetic Modification without examining the effect on human consumption. Producing wheat that grows smaller, faster, and closer together. Wheat that is resistant to toxic chemicals and companies such as Monsanto owning strains of now ‘supergrain and super wheat’ resistant to their own pesticides and chemicals; designed to kill all other seeds in their path. As well as contaminating farmer’s land either side of ground owned by Monsanto, them bullying small authentic farmers into submission through lawsuits and loss of revenue, and blatantly spraying other fields with their genetically designed chemicals, pesticides and herbicides. Literally poisoning the land and people.

Start to do your own research and find out why our grandparents could eat wheat; but why we are now crazy to allow it in our homes, let alone eat the stuff- in whatever form it comes in.

It is actually not that hard to get wheat out of the diet. At first, it may seem overwhelming; but doesn’t everything new seem overwhelming at first? Take it one step at a time. The ball starts rolling pretty quickly and it can become a whole heap of fun experimenting with food again. Not to mention how fantastic a person feels when wheat is removed completely from the diet! A little creativity is needed- but then again we now have google, instagram, pinterest, facebook and loads of other sites where you can google wheatfree recipes! 

As opposed to having the mentality that we are missing out- flip it! Start to ponder on the exciting options that start to unfold when we take wheat out of the diet and replace it with wholefood filled with nutrition! The options are endless! All it takes is that imagination moving into first gear, and some visits to different cafes to get ideas! If you are on the coast try MarieAnita’s and The Paleo Cafe– both in Burleigh.

When we choose wheat free, we can still eat all our favourite recipes- we just throw out the wheat and substitute in wheat free options! And here is one of my favourites!!

Mouthwateringly delicious….PIZZA!!

I have used mozzarella cheese in my recipe. As a celiac I cannot tolerate the poor excuse for a beverage- milk – sold from the shops. Research cows milk and start understanding how nutritionally devoid pasturised cows milk is…-Make your own informed decision here too. You might opt to stop drinking milk from cows also- but one step at a time ;).. I can enjoy a little hard cheese as a celiac as lactose content is not so high. If you want to know a great and easy healthy alternative to cows milk- HERE is a recipe for how to make your own nut mylk. Easy. If you can find raw milk- usually sold at markets or the organic shop- get that. Raw milk is the real mccoy.

The base for my pizza is made from cauliflower, predominantly. I kid you not and please dont knock it till you try it. We have to give stuff a go before we turn our nose up- give it a go! I didnt believe how amazing this was going to turn out! It was a hit! Noone knows what its made of unless you tell them! Tell them after!

What you need to make it work:

  • 1 head of cauliflower
  • 3/4 cup virgin coconut oil (never olive oil as you are going to cook it)
  • 2 large eggs
  • 3 cups shredded mozarella cheese
  • Your favourite pizza toppings- go wild! spinach, onion, fresh herbs, meats, nuts, pineapple, capers, anchovies, sundried tomatoes, capsicum,garlic, mushrooms- use loads of colour! …. the list goes on.
  • Tomato paste. You can buy it but make sure you buy a clean tomato paste like Leggos. Use one canister- or two if you really like a tomatoey flavour Alternatively you can use a delicious pesto (homemade preferably too) for a more nutty pizza.
  • 1/4 cup grated parmesan cheese.

What to do to:

BASE:

  • Preheat oven to approx 120C-140C.
  • Blend the cauliflower head in a powerful blender. I use a vitamix. If you do not have a blender- you can cook the cauliflower in water. But the issue here is you lose most of the good nutrients in cooking however it an option for people without blenders.
  • The vitamix with break the cauliflower up into a wet mush; mash if you have cooked it.
  • In a bowl add the cauliflower with 1/4 cup coconut oil, eggs and 1 cup of mozzarella cheese; season with Himalayan salt, pepper and any herbs you might like in your crust. I often use cayenne pepper to aid with thermagenic digestion.  Mix until it is blended with no chunks.

Lightly coat a pizza pan or large rimmed baking sheet with coconut oil.

Pour the cauliflower mixture onto the pizza pan. This is the base for your pizza. Press it into a pizza base not more than 2 cms thick. Mould the edges higher to form a thick crust pizza. I’m a thin crust pizza girl but try this with this style first, before you go all thin on me. Trust me. :)

Bake for approx 20 minutes, or until lightly golden brown:

Remove pizza base from the oven and start to decorate as you would a pizza from the shops or made from home! ie with all your favourite ingredients!

TOPPING

  • Start with your pizza base. Use the tomato base, pesto base or whatever base you like for your pizza. I used a traditional tomato base for this pizza- and used the leggos tomato paste.
  • While the pizza base was browning you could have been cooking up any meats, browning nuts, sauteeing onions and garlic- if you like those on your pizza so they are ready to just add once the pizza base is ready.
  • There are no rules to pizzas- add the ingredients you love.

I used baby spinach, sauteed onions and garlic, sliced mushroom, celery, pepitas and sunflower seeds, capsicums, fresh pineapple- pretty much whatever was in my fridge at the time. Loads of greens. If you are not a cheese fan- you don’t have to add all that cheese- I often have cheese free pizza – on the topping. In the base it is necessary to bind the cauliflower. Keep that in mind :)

I add poached free range paprika chicken, cayenne pepper, the remaining mozzarella cheese, fresh oregano and chives from my balcony garden, H salt, pepper and drizzle with some- not all- of the coconut oil. Just use what you think necessary. The oil is for browning. You don’t need it all.

Tip- add less cheese on top;  and add more if you think you need it once it starts melting. We can always add, we can’t remove once its on and melted. Nothing worse than a typical American style over cheesed pizza. Gross.

Pop pizza back in the oven and bake until the mozzarella melts. Approx 10-15 minutes. Voila. Heaven by pizza!

Guilt free, delicious pizza! 

Have you even wondered why some people can eat an entire family sized pizza from the pizza shop and still be hungry? 

It is actually not that uncommon. Why. The pizza base from a traditional pizza is wheat based. Wheat is now devoid from any beneficial nutritional content for human beings. We are overfed and undernourished which is why so many of us are getting fatter and fatter, but we are still hungry…we are  undernourished. We think that if we eat MORE we will feel full. We wont- if we keep eating that stuff they call ‘food’ out there. Most if it is wheat based. We will still feel hungry, we will still eat more, and we will still grow fatter and fatter if our choice in food types does not change. 

It can be as simple as swopping our ingredients. It is not that hard- we just need someone to show us.

I hope I have shown you an option for pizza that will blow your mind and taste buds! My 120kg fiance can eat 2 family sized pizzas from the pizza shop in one sitting. He could only finish three pieces of this pizza before we was chocker block full.!! The difference here is that this pizza is made from ‘wholefoods’. Wholefoods are foods that are made largely without man messing with them. So these foods have the nutritional content that our bodies crave. We dont feel heavy and lethargic after eating wholefoods. We feel satiated, and great! We feel energised! Food is supposed to be our fuel- why are we filling up on the cheapest, poorest quality fuel- not designed to run our motors, nor feed or bodies or minds.

This pizza is exploding with flavour and goodness and total yumminess that you just won’ t believe it till you try it! Your body will love you for it and your mind will wonder how it is possible!

Many of my followers are vegan or vegetarian- so omit the animal ingredients and adapt the recipe to suit your dietary requirements. We are all looking for health. We can all learn from each other. Beef, Chia and Feta Rissoles made EASY!

15 min meal – wholefood- gluten free – weightloss- superfood- family friendly

Vashte's Beef, Chia and Feta Rissoles

I dont eat a whole heap of red meat so usually, when I do; I like to slow-cook it so that my body can more easily actually absorb the nutrients; but every now and then I like something different.  So here is my ‘something different’ from the other night! This meal is mega healthy of course, mega easy, and mega fast. There is no excuse. Lets get you in and out of the kitchen as fast as possible whilst ensuring you obtain healthy, tasty, nutritious meals that are good for you, and the family!

Always use organic produce where you can. Always use fresh produce as opposed to canned, or bottled products, but as you will see, sometimes we just need to opt for the bottled version for whatever reason. Yes- I use canned and bottled products, but I make this as rare as possible. Food has to be suited to your lifestyle- don’t make it a big deal. Make it real for you and your needs. Simple. We complicate too much in life. Don’t add food to that list! Make your meals fun, healthy, and delicious! When you do, you will gag the next time you grab a falsely ,marketed ‘healthy’ meal anywhere. Beware of marketing- very clever lies indeed. Healthy food is not rocket science. Your body soon educates you as to what you like to eat- if you give it half the chance. You are your own guru!!

Note to you: I have recently returned from a wonderful trip to the Greek Islands and Turkey (happy dance). What I would like to point out to my fellow Australians, as I reside in this beautiful looking country is, the food down here.. has NO TASTE. Yes really!!! I popped in to the supermarket and bought some ‘fresh produce’ the other day shortly after returning.. pfffff. NONE of it had any taste. And it was all giant size, and farrrr to perfect looking to be REAL. Be aware of the food you are eating, and what it has gone through to get to you.

Thankfully I visited my local Farmers Markets on the first possible Saturday and bought some local produce. It was better, but certainly not the quality I enjoyed whilst in the Greek Islands in particular. Do you realise most of us have forgotten what real food tastes like? I was dancing happy dances over the Greek Salads… wow the kaleidoscope of flavours I enjoyed from the REAL tomatoes, cucumbers, onions.. oh Lord -the Feta cheese!!!! The yoghurt!!! WOW!!! Our food down here is abysmal. Try to find the best quality you can via organics, free range, pesticide free, grass fed meat NOT GRAIN FED!!!! It is not as easy as it ought to be, but if we vote with our money… the farmers HAVE to change as supply and demand dictate what is popular. DEMAND BETTER. The more we buy AWAY from the supermarkets, the more the BULLIES have to sit up and take notice as the ONE thing they HATE is losing MONEY. This is the language they speak in. MONEY. They do not care for my, nor your health. They do not care about reducing terminal illness. They do not care about you not being able to afford food. They do not care.

They care about MONEY. That is it. So search out your local farmers. When you buy food that is IN SEASON it is not as expensive. It is also much better for you. Our bodies need different nutrients at different times of the year- hence why certain foods  grow at those times. It is all natural, and logical (neither of which can the supermarkets claim to be!) Remember: supply and demand.

If you want some options on potentially affordable organic produce, often delivered to your door- message me and I will help you find some close to you. Make little changes first. Don’t try to change everything all at once. If you make a little change, you are often surprised at how easy that change is, and then you become encouraged to make more little changes. Before you know it… you are more healthy, happy and vibrant than you were when you started! It gets easier and easier! All you need to do is take one step, then the door opens and you start to really see things you previously had been dulled to.

It is time to wake up and take charge of your life. Take charge of your health. And so NO to things you absolutely dont agree with. Like experiencing ANY lack whatsoever; ANY health issues whatsoever; ANY helplessness whatsoever.  You dont know what you dont know. Take the blinkers off- they were often unintentionally put there by people who love you from birth, because they have them on too! We live in a beautiful, but mixed up, muddled up world if you believe everything you are told and see on that evil contraption in your living room – your TV. Quit it. Life is not lived fully by sweeping issues under the carpet, nor by circumnavigating around topics trying not to ‘insult or hurt’ people. It is time to get direct and ask questions point blank, and expect point blank answers. Figure out for yourself how to solve the issue, and/or connect with people who can help you. Not keep you down.

Vashte's Superfood Rissoles

You deserve the recipe now that my rant is over!!! xx

What you need:

Rissoles:

  • 300- 500 gm organic, grass fed beef mince. (as healthy as you can get it)
  • 1-2 onions
  • 2 cloves garlic
  • Himalayan salt and pepper
  • herbs, fresh is great but you can use packaged as well. I used  thyme, and cayenne pepper today. Cayenne pepper is a thermagenic. This means it can help boost the metabolism whilst digesting. It is also very spicy if you are not used to spicy hot foods, so go easy on it especially to start.
  • A few leaves of kale

To bind the ingredients:

  • 3 Tablespoons chia seeds
  • 2 eggs
  • Organic coconut oil for flash frying.

Sauce:

  •  40 gm Feta cheese
  • Organic tomato sauce from a bottle- found in supermarkets – or make your own if you have time!

How To Make It Work:

  • Add all ingredients to a bowl and mix with your hands. Add more veges if you like- try grated carrot, zucchini, peas…
  • The eggs will help to bind the mixture as will the chia seeds. Allow the mixture to sit for 5-10 minutes. This will permit the chia to expand. If you think the mixture is not binding well enough, add one more egg and mix well.
  • Roll into balls and flatten to make patties:

  • In a large saucepan, melt 2 Tablespoons of coconut oil over low to med heat.
  • Add your rissoles once the oil is melted and warm. Brown slowly on both sides.
  • Once browned, add tomato sauce and sprinkle feta cheese in with the tomato sauce. Leave rissoles in the pan with the sauce.
  • Allow the sauce to heat and cheese to melt. If you think you need more sauce, add just a little water to make the sauce less thick and enable it to become more viscous. (runny).
  • Once warmed through, ensure the rissoles are cooked completely. Once this is achieved- they are ready to serve.
  • Serve with gluten free spaghetti- a VERY  small portion; and a LARGE portion of leafy green salad. It is IMPOSSIBLE to get too many green vegetables so go wild!!

Bon apetite!!This is a complete, filling, nutritious meal. Suitable for the entire family. If you are looking to lose weight, opt to enjoy this meal without spaghetti. Enjoy it with the rissoles and green leafy salad. It is a rare day that I ever eat pasta- Gluten free or not – I am just giving you options to suit all members of a potential family.

I Eat Fast Food!

  • Think healthy food is boring? Change your attitude and think again! Define boring to me please?

Here is the fastest meal in the West- all healthy, absolutely delicious and nutritious and the absolute beginner in the kitchen can’t even stuff this one up!

Organic Chicken and Spinach

Organic Spinach and Onions blanched, topped with Chicken Breast sauteed in Basil and Coconut Oil. Done deal.

Please explain to me how hard that is to make?! Faster than waiting in line at the fast food outlet, and will actually nourish your body with nutrients you need! You feel amazing after eating this, as opposed to heavy, bloated and lethargic.

Simple clean healthy meals- made in 10-15 minutes.

You Will Need:

  • 100-250 gm organic free range chicken ( or whatever meat you like)
  • Organic Spinach- you decide how much- there is never enough for me :)
  • Organic Onions
  • Basil – or whatever herbs you like to season with
  • Himalayan salt and pepper
  • Coconut oil

How To Make It Work:

  • Blanch the spinach and onions in water and your chosen herbs.
  • Saute your meat in coconut oil and your chosen herbs.
  • Voile- meal prepared. Takes all of 10-15 minutes.

Shop for your greens at your local farmers markets HERE for QLD; better still, hunt down your organic markets and outlets- HERE for BNE area. Buy what is in season as the price will be more competitive and we as humans are designed to eat the foods that are actually in season as opposed to demanding our favourite foods all year round; which is why genetic modification is developing at such an alarming rate.

If we choose healthier options for ourselves, our wallets will demand where the big money is invested. Keep your food seasonal, and enjoy the added health benefits that follow- ie higher immunity = less illness. You don’t need the flu shot!!!! Funny that I have never had the flu shot and … have I EVER had an actual flu? How about a cold??? I’m working with people in close proximity- if anyone is going to get sick- you would think it would be people like me… but no. I eat well- my food is my medicine. How about you?

Paprika Chicken on Spinach

I used Cayenne Pepper on my chicken in this one as Cayenne Peeper is said to increase metabolism. You dont need those ‘pre-work’ drinks- just eat the right foods :)

Use your spices and herbs to jazz up your meals. Include Himalayan salt- it is VERY good for you. Mix and match your spices. Grow your own herbs! Add them to every meal!! Prepare a meal like this the night before for your lunch at work- take an apple and an orange to have as a snack, and a couple of grissini sticks if you feel like it. Top up on green tea and water all day long. Get your body demanding alkaline, healthy, light meals! The more alkaline you become the more you crave healthy, live, light nutritious meals like these. Simple, easy, nutritious. That simple.

Be prepared. Plan your days and weeks. If you fail to plan, you plan to fail so exactly what is it you really want in life? Do you really want optimum health? Do you really want to live an abundant life? Do you really want to be lighter, physically, emotionally and Spiritually? The foods we eat make a remarkable impact on who we are and who we present to the world. If we really think about it, it becomes logical and clear. Our bodies are made up of cells, we are made up of bones, organs, blood…physical quantifiable measurable items. Such is the human body. We function on a bio-chemical level. Biology and chemistry together. Doesn’t it make logical sense, forgetting the emotional and spiritual aspect for the moment, that the fuel we put in this machine -our body – will determine how efficiently and effectively that machine works?

  • You wouldn’t put diesel in a Maserati would you?
  • Why would you put diesel in your body- your Maserati for life?

Why are we so amazed when our bodies finally start to fail when we continuously stuff them full with junk? And then even more amazed and disappointed when we change one day, one week, one month, out of our lives, expecting our bodies to return to optimum functionality over night?  In reality  our bodies are amazing, incredulous machines and NOONE has all the answers. Noone can figure them out.

YOU are your own best doctor because noone knows your body the way you do. You know what your body digests easily. You know what causes gas, indigestion, pain, tiredness…. You know what foods make you feel light and more alert. You also know how the foods you eat affect you mentally. If you eat foods and they cause pain in your body, tiredness, bloating…anything uncomfortable- it stands to reason that you dont feel so good about yourself, doesn’t it?

Most of us can take a moment and reflect on the reality of the situation and take ownership of our own bodies, minds and situations. Really we can. It may be confronting at first; perhaps humourous if you have a good sense of humour, perhaps enlightening. But if we all just took a step back and observed the truth of the situation, we could all take a lot more responsibility for our present scenario, which then gives us the power and confidence to actually do something about it. We dont always need to rush off to expensive doctors, ‘specialists’, ‘gurus’. Anyone calling themselves an expert or guru is banned from my world- all those so called ‘experts and gurus have FAILED big time over and over. I would suggest you do the same.. there are no such things as experts and gurus– we continually  learn and grow, grow and change. You are your own specialist. End of story.

Find people who understand that each person is different, and each person requires a different approach. We are not the same, none of us. One size has never fitted all!!

Start with making healthier nutritious choices in your food! And watch as your world turns inside out and upside down with good things! Great changes! Exciting changes- without tooo much effort. When you begin to see results, you get excited right?! Start with your food. Food is the sustenance we need to keep our bodies functioning at peak condition– so why do we abuse it so? Make that change! You can do it! I BELIEVE IN YOU!! That is a start :) xx
